HI! I’m here 🙆🏼‍♀️
Between moving out of my apartment, traveling, and figuring out what’s next for me... I’ve just been “off” for the last few weeks. I’ve stayed quiet on here so I could focus and things are falling into place now😍 I’m officially working on my Nutrition Coach certification to go along with my PT certification and have a few fun things in the works 🥳
Ps- I have no clue where these pants are from because I stole them from my sister’s closet and probably won’t give them back 🙃

◾Breakfast 645 AM - Egg & turkey bacon scramble + rye toast and coffee ☕ Scramble is made with an egg, egg whites, bell peppers, two pieces of bacon 🥓 then topped with pico de gallo!

◾Lunch 1245 PM - Turkey sausage, roasted sweet potatoes with rosemary + avocado oil & steamed asparagus

Pan-seared salmon with tahini-miso sauce, served with a salted shaved cucumber salad—an easy dish that comes together quickly for a healthy delicious weeknight meal. .⠀⠀
On a mandoline, thinly cut a few small Persian cucumbers, place in colander and toss with about 2 tsp kosher salt. Let sit and drain over the sink or a bowl. Cucumbers should give out some liquid and soften a bit. Meanwhile, make the sauce + cook the salmon.⠀⠀

Tahini-miso sauce: In a small bowl, mash together 1 Tbsp white miso and 2 Tbsp tahini with a fork. Stir in about 1 Tbsp sesame oil and whisk with fork until smooth. Add a bit more oil if needed. Splash in a bit of warm water to thin out the mixture, keep stirring until well-combined and smooth. Add in about 1 Tbsp rice vinegar, continuing to whisk, drizzling in more warm water if you’d like to have a thinner sauce. Crush a small garlic and combine with tahini mixture. Taste, adjust seasoning to your liking; add a bit of fish sauce if you need it to be a touch saltier (omit altogether if things are already flavorful). Set tahini-miso sauce aside.⠀⠀

Cut 1 lb. of salmon into ½ inch slices. You should have about 6-8 pieces. In a hot cast iron pan (or nonstick pan), add some neutral oil and sear the salmon slices on high heat (in batches if necessary as you don’t want to crowd the pan), about 2 min on one side, flip and cook for about 30 sec-1 min on the other side. On a serving plate, spoon on some tahini-miso sauce, place seared salmon on top, serve with salted cucumbers, drizzle more tahini-miso sauce all over, sprinkle with scallions, sesame seeds and shichimi togarashi. Should serve 2.⁠

DAIRY FREE BAKED STUFFED SPINACH and RICOTTA SALMON! Swipe to see the close up. SO delicious!!!! Stuffed salmon today and it was so simple and a major game changer. Paired this with my last piece of sweet potato toast topped with avocado 🥑 and cucumber noodles with tomatoes, dill, parsley, red pepper flakes and a tahini drizzle. Hope you’re all having an amazing weekend. •⠀

Deets: sweet potato toast with avocado and hemp seeds, wild salmon...sauté some spinach with garlic and toss with dairy free ricotta) cut a pocket in the middle of the salmon and stuff the filling And Brush with olive oil and season with salt plus herbs of Provence then bake on 400 for about 12-15 minutes depending on thickness. Serve with spiralized cucumber and tomatoes with dill and tahini.⁠

Weight loss is an emotional roller coaster. Some days are going to be WAY harder than others. The upside to that is that other days are going to feel easy compared to those hard days. No matter how you choose to lose the weight, you need to be ENJOYING the journey. It should never feel miserable. Will there be times you’re annoyed you “have” to make a healthier choice than everyone else around you? Yes, of course. But you should never let that make you feel miserable or mad. You should feel PROUD that you had the strength to choose something that fit YOUR goals! Take pride in the fact that you’re trying to make yourself healthier! I used to get home from an outing with family where I stayed in track & I felt SO proud. That feeling made me want to keep going! So then I would eat perfectly each day because I wanted to keep feeling proud! That cycle is how weight loss happens! Because I wanted to keep that feeling going, I ate right, continuously. And guess what happened? Of course I lost weight! Consistency is key, along with will power. Saying no to things at certain times is NOT the same as completely depriving yourself. You can’t say yes to dessert every single time it’s in front of you & expect to see a loss. Next time you really want to eat something you know you shouldn’t because maybe you’ve been cheating more than you should, just remind yourself that this IS NOT the very last time in your life you’ll have the chance to eat whatever it is you’re wanting. Say no today. You’ll have another chance. Happy Wednesday friends!

A major keto haul for me at @grassroots68. I selected either products or flavors I haven't tried and have been looking for. I was amazed at so many keto products under one roof. Also picked up our go to natural cough/cold medicine and fresh baked muffins for the kids. Will definitely be going back! If you are in the Pasadena area, check them out!

I remember sitting in that salon chair like it was yesterday - I was so uncomfortable because I barely fit and the stylist couldn’t raise the chair any higher while I was sitting in it. I was so embarrassed and prayed the chair didn’t just break all together. There’s a lot of things that people who have never been morbidly obese will never understand - like the constant fear of breaking furniture or having teenagers point and giggle as they pass you in a store.

When I made the decision to get healthy, I also made the decision that failure would not be an option. I stared at myself in the bathroom mirror just minutes before being rolled back for gastric bypass surgery and told myself “You will not fail. It’s time to finally be a success story.” I will never take comfortably sitting in a salon chair or confidently sitting on a wobbly bar stool for granted. I did this for me and I’m thankful to be where I’m at today. 💕

I remember sitting in that salon chair like it was yesterday - I was so uncomfortable because I barely fit and the stylist couldn’t raise the chair any higher while I was sitting in it. I was so embarrassed and prayed the chair didn’t just break all together. There’s a lot of things that people who have never been morbidly obese will never understand - like the constant fear of breaking furniture or having teenagers point and giggle as they pass you in a store.

When I made the decision to get healthy, I also made the decision that failure would not be an option. I stared at myself in the bathroom mirror just minutes before being rolled back for gastric bypass surgery and told myself “You will not fail. It’s time to finally be a success story.” I will never take comfortably sitting in a salon chair or confidently sitting on a wobbly bar stool for granted. I did this for me and I’m thankful to be where I’m at today. 💕

I talked to one of my clients for an hour the other day, WHILE I was at the gym + listened to her cry and express herself.. I honored her feelings and supported her in that moment. She felt ALONE. She felt LOST, empty. And didn’t know WHY. And that can be quite a deep pain. ⁣

We all go through these things + life isn’t always fair. Losing my grandma a few weeks ago, out of no where, to cancer? Wasn’t fair. I battle EVERYDAY without my best friend here. 👇🏻⁣

There are CRUEL moments, and I am a strong believer that NOT all tragedies “have a light at the end of the tunnel”. Read that again. ⁣
⁣
BUT.... I DO believe, you have to work hard to FIND it. 🌈✨⁣
⁣
There are certain situations that, “see the positives” does not apply. ⁣
⁣
But, what I am learning is YOU HAVE to put one foot infront of the other. ⁣
⁣
You can feel. ⁣
You can stay there for a day, a week, a month. ⁣
You can cry. ⁣
You can cry, hard. ⁣
⁣
But you can’t STAY there, for good. You’re meant for more than that.⁣
⁣
There are still things to⁣
Smile about ⁣
Laugh about ⁣
Be thankful for 🦄💕⁣
⁣
You can’t ONLY dwell in the sadness or hurt, because I know there is STILL things smile about. No matter WHAT. The froth in your coffee? That being one. 😉⁣
