As promised, the recipe for my Banana Bread Loaf 🍌 This isn’t a “slimming world” recipe however its slightly lower in fat/calories then a standard homemade recipe so you can have a good slice within syns!⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
150g caster sugar (30) ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
50g reduced fat butter (13) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 eggs ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀
3 very ripe bananas, mashed (12 for cooked fruit) ⠀
200g plain flour (36) ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 teaspoon bicarbonate of soda (0.5) ⠀⠀
1/2 teaspoon salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 teaspoon baking powder ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tsp cinnamon ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
(Total = 91.5) Serving 10 slices - Av. 9 syns per slice.
I also popped all the ingredients into a calorie calculator and it came out at 200Kcal per slice 😁

To make: Mix together butter and sugar before adding in eggs, water and mashed banana 🍌 Mix well before adding in all remaining dry ingredients! Place mix into a lined “loaf tin” and bake at 180• until the middle has peaked and the outside is golden! * I always prod mine with a knife to check the cake is cooked inside* 🔥

Let me tell you my story and journey with my relationship with food.

1. In 2015/16
- I had abs
- Was less than 10% body fat
- I was a personal trainer and dietitian
- I was training 20 hours/week for triathlon
- I had qualified for the Australian Team for sprint, Olympic distance and half ironman distance triathlon and Duathlon.
- Had my flights and accom booked for the world champs for triathlon in Chicago
- My “body” was used for marketing and PR for many health, fitness and sporting events and featured in magazines.
- I was sponsored by sporting brands.
- I would run 10km in 37-38 mins, a half marathon in 1 hr 26 or less. I finished my first half Ironman in 4:49 and was disappointed in my time.

Was I fit? Hell yes!

When it came to eating:
- I ate the same foods most days
- I avoided social situations because I didn’t want to eat too much fat or oil
- I said NO to many opportunities because I didn’t have control over my food and that gave me anxiety
- I would allow myself to eat pasta and or icecream ONLY if I trained that day
- I would request to waiters to not add any oil to my foods
Did I have a healthy relationship with food?🤔

When it came to training:
- I never missed a training session
- I would always to the prescribed amount or a little bit more
- I didn’t have a rest day
- I ignored prescribed rest days or instructions to keep intensity low
- I trained through injury
- I put training FIRST before family events, holidays and work opportunities?
- My priority when going away on a holiday was needing to know what I could eat and where I could train. 
Was I dedicated or disordered?

When it came to my health:
- I had trouble sleeping
- I got a bone stress reaction
- I had no libido
- I was cold all the time
- I would wake most nights wet from sweat and change my clothes.
- I did not have my period and in 2016 I had not had a period in 5 years….

Was I healthy?
Was my diet health enhancing?
Was my exercise health enhancing?
Was I happy? 
No.

I wish I had the clarity back then that I do now.

95% of me thought I was doing all the right things.

Ich habe heute Nachmittag diese kleinen Mini-Franzbrötchen gebacken 😋
Leider haben sie nicht ganz die typische Franzbrötchen-Form bekommen 😁 aber sie sind sehr lecker geworden und darauf kommt es doch schließlich an oder? 😍
Ein Stück hat nur 71 kcal, 2g Eiweiß, 12g KH und 1,3g Fett 📊
Rezept (6x Stück): Man benötigt 100g Vollkorn-Weizenmehl, 1x TL Backpulver, 80g zuckerfreies Apfelmus, Erythrit oder anderes Süßungsmittel, Zimt und 30g fettarme Margarine. Zuerst das Mehl mit dem Backpulver, dem Apfelmus und etwas Erythrit zu einem Teig verkneten. Anschließend diesen auf einer leicht bemehlten Fläche ausrollen. Danach die Margarine mit etwas Erythrit und Zimt zu einer Creme vermischen und den Teig damit bestreichen. Zum Schluss den Teig von der Längsseite aufrollen, in 6 Stücke zerteilen, und in der Mitte eindrücken (für die typische Franzbrötchen-Form).
Die Franzbrötchen bei 180°C Ober-/Unterhitze für etwa 15 Minuten backen👌

This has been my go to for a hot minute now. It's just too easy and tastes delicious! I make it the night before work and grab it out the fridge in the morning 🌸⁠

RECIPE:⁠
1 banana⁠
1/2 cup oats⁠
1-2 tbs maple syrup⁠
1/2 cup plant milk (I use oat milk)⁠
1/4 cup blueberries⁠
optional: flax seeds, chia seeds, any other toppings!⁠
Mix all ingredients in tupperware or a jar the evening before and pop in the fridge. Grab in the morning and top with a few more blueberries if you like!⁠

❤️ Roast beef 🤤 - 1kg joint of beef seasoned with salt and pepper, sat on a chopped red and white onion, roasted with foil on for 40 minutes, then without foil for 10 mins. Left to stand for 20 mins before carving 😍
🧡 0.5 syn homemade Yorkshire puds - I make a big batch of these once a month and freeze, saves so much time 😍 step by step recipe for these on my highlights!
💛 Roast potatoes - seasoned with @jdseasonings ‘perfect roast potatoes’
💚 Mash - potatoes cooked in water with a veg and chicken stock cube. Once soft most of the stock drained - save a few tbsp worth. Blend it up - I use my @magimixuk then season to taste! Just don’t overblend!
💙 ‘Roasted’ sweet potatoes and parsnips - done in my @salter_cookshop airfryer
💜 Cauliflower cheese - sauce made by heating 140ml milk slowly and adding salt, white pepper and nutmeg and melting 2 extra light dairylea triangles. Add 1 tbsp cornflour (1 syn) and 50g reduced fat cheddar - save a bit of this to put on top when you grill (all of the milk/cheese adds up to 2 hex a, serving 2 of us)
❤️ Broccoli, carrots, green beans and sprouts
🧡 Pigs in blankets - 1 @heckfooduk chipolata (0.5 syns) twisted into 2 and wrapped in smoked bacon
💛 Stuffing balls - 1 @lindamccartneyfoods sausage, defrosted and shaped into balls before cooking
💚Gravy made using meat juices (I can’t have it without, I’m a northerner and it would be a crime to ruin gravy!), homemade stock, a @tescofood red wine stock pot and granules (I count 5 syns, no idea if this is accurate but it’s never done me any harm 🙊 do what’s best for you!)

I caved today. With guests staying over, I had the worst unplanned cheat day involving 1000s of syns/ calories. Truthfully, eating that much food and junk really wasn’t as great as I remembered. The pic on the left came up in my memories today from 2014.  The photo on the right is a few days ago.  Both no makeup.  I’ve been pretty flustered with myself lately because I’ve gained a little weight back.  This has inspired me to get back on it.  It reminded me that I’m still over 100 pounds down.  Loose skin shouldn’t discourage me from keeping up with my journey.

Blackened chicken sandwich for dinner! I used @tyson blackened tenders (1 pt), a toasted onion and poppy seed bun (4 pts), velveeta slice (1 pt), light mayo (1 pt), and some romaine lettuce (0 pts). It was delicious! The tenders were super spicy and very similar to the Popeyes blackened tenders. •

Chicken Alfredo was the plan for dinner (with pasta) but I didn’t end up with enough points . I had a delicious lunch my Grandma made so I had to adjust! Instead of pasta I chopped up some cooked broccoli and topped it with grilled chicken and Ragu Simply Alfredo! Only 5sp for the whole plate and I didn’t even miss the pasta 🙌🏽🙌🏽 This was a win in my book and why I love @ww 💚

🏋️‍♀️12 WEEKS WITH VICTORIA🏋️‍♀️ This is what we achieved with 12 weeks of training with Victoria.

Her goals were pretty simple- lose body fat & get strong.

Now to achieve this, I put her in a mild calorie deficit- which is key for fat loss & set her protein high (1.8g pet kg of body weight) to help maintain & grow muscle as much lean muscle as possible to help keep her metabolic rate high.

She trained 4 full body days per week, with 3 cardio sessions & as her job was quite active, 10-15k steps a day weren't a problem to achieve.

Not only did she lose around 6kg, but she increased her squat to 70kg (from 45kg) & her deadlift to 80kg (from 60kg). Fat loss is as simple as a caloric deficit, consistency & good progressive training program, but a knowledgeable, empathetic coach that will keep you accountable is KEY to keep you adherent.

i’ve not been active for a little bit. i’ve been busy with work and school, and went back home for a week because a family member passed away. it’s been stressful lately. and i know it still will be for the next few, because of school still and i start my new job next week, then visiting back home mid-december. just lots of things going on. i rode an airplane for the first time ever, and i was by myself. that was really something. sometimes life just keeps throwing things at you, but you just got to keep on. i’m just really tired lol. i’ve also lost my voice, from going from 20-30°F weather in TN back to 70-80°F weather in California lol. here’s to another hectic week, doing our best to make healthier choices.

i’ve not been active for a little bit. i’ve been busy with work and school, and went back home for a week because a family member passed away. it’s been stressful lately. and i know it still will be for the next few, because of school still and i start my new job next week, then visiting back home mid-december. just lots of things going on. i rode an airplane for the first time ever, and i was by myself. that was really something. sometimes life just keeps throwing things at you, but you just got to keep on. i’m just really tired lol. i’ve also lost my voice, from going from 20-30°F weather in TN back to 70-80°F weather in California lol. here’s to another hectic week, doing our best to make healthier choices.

Hmm #mozzarellasticks fail. I coated them in ground pork rhinds mixed with salt and Italian seasoning, and egg wash. Let them freeze for a few hours and then air fried them and it didn’t quite work out haha. My husband said they’re the best tasting keto mozz sticks I’ve made but I would prefer for them not to explode haha. Any tips??

A new week, a new opportunity to get shit right! 👏🏼

It only seems appropriate that during National Diabetes Awareness month I would have a MAJOR diabetic equipment malfunction. I was running low all day and feeling great. I even had to keep eating to make sure I didn’t bottom out and then As the day went on I was getting higher and higher, but I thought just that I over corrected a bit and it would eventually even out. Sat down to dinner and only had like 3 bites and I was just feeling queasy and sick and flush. So I look at my phone and it says 354!! Ok so maybe I really over corrected, I hit my pump for 2 units and started to watch a movie with the boys. About 45 min later I did a finger prick 504🤬🤬🤬!! WTF!!! I look at my pump and could see liquid in the viewing glass, so I decided to change it and when I pulled it off my tube was a pinched 90 degree angle and the memory of hitting my arm off the wall earlier today came flooding back. 🤯🤯🤯 So I haven’t been getting any insulin for a few hours!! So new pump, new dose, and numbers coming down slowly. Ugh I forgot how terrible being that high feels. But it goes to show you how careful you have to be. Who knows how high I would of been if I would fell sleep or never decided to change pump. Most days are pretty easy breezy, but some make you remember how serious this disease really is. But now I have my teenager checking in to “make sure I am not dead” lol, so I think I will be ok 💙💙💙

I cut about 4 inches off of my hair 💇🏼‍♀️: yes I actually had that much hair to cut off 😂. Before monat my hair was thin, breaking, & would literally not grow. Committing to @monatofficial was the best decision I’ve made & now I can rock a short blunt hair cut and look like I have thick healthy hair.
OH & I’m able to get blonde icy colored hair without fear of it falling out. •
