Since my chocolate granola is a huge hit, I decided that I have to make some PEANUT BUTTER GRANOLA 🥜 This granola is just as chunky and just as delicious in its own way 🙌🏻 Low key tastes like nutter butters too 🤤 It’s also vegan & gf! Not to mention so simple too. Hope you’re having a great day friends! ✨
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients:
- 2.5 cups rolled oats
- 1/2 cup peanut butter
- 1/3 cup maple syrup or honey
- 3 TBS coconut oil melted
- 1 tsp vanilla
- 3 TBS coconut sugar—or cane sugar
- pinch of salt
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀
Directions:
- preheat oven to 350°F
- in a large bowl, add the oats, coconut sugar, and salt
- in a separate bowl, combine the peanut butter, coconut oil, maple syrup, vanilla
- add the wet ingredients to the dry ingredients and stir well
- line a baking sheet with parchment paper, add the granola mixture and make sure to press down well
- bake for 15-17 minutes
- let cool on baking sheet, then break apart into chunks

Serves: 6 bars

INGREDIENTS:
For the Base:
▪️40g Coconut Flour
▪️30g Oat Flour
▪️20g Brown Rice Syrup
▪️25g Condensed Coconut Milk @naturescharm 
Caramel:
▪️100g Peanut Butter ▪️60g Condensed Coconut Milk
▪️40g Brown Rice Syrup ▪️15g Coconut Oil
▪️Chopped Peanuts (optional)

Choc Coating:
▪️60g Dark Chocolate
▪️10g Coconut Oil

METHOD:
1. Combine base layers and press into a lined tin. Put in the fridge. 
2. Heat condensed coconut milk and coconut oil in the microwave for 45 seconds. Add peanut butter and syrup and stir until combined. Pour over base and put in the freezer. 
3. Once set press chopped peanuts onto the top of the caramel and cut into bars. 
4. Melt dark chocolate with coconut oil and pour over bars. Store in the freezer as this is a super gooey caramel. 💛

I’ve been promising you guys the recipe for the seeded loaf that I posted that last few days. So , here it is.

Couple of quick suggestions:
⠀
1. Watch the hydration early on. This dough was very wet after the initial mix. Adding the seeds helped to soak up some of that moisture, but be aware of that going in.
⠀
2. Follow the doughs lead. Give it folds when it needs it. After the addition of seeds the dough will be more manageable and won’t need as much hands on attention.

3. In my last post I talked about the variables that effect your dough. Really try to focus on these variables as you work with the dough.

Bread Specs:
Autolyse 225g @kingarthurflour AP flour, 50g whole wheat flour, 25g @bobsredmill cornmeal, and 235g water for 1 hr. Added 67g levain and let sit for 30 min. Added 7g sea salt. Lamination and added 15g Amaranth and 15g Chia seed. Let sit for 30 min. Followed by 4 coil folds every 45 min. Let sit for 1.5 hrs to finish bulk. Shaped and into fridge for 15 hrs. Bulk temp was 76F. Baked in @lodgecastiron combo cooker at 500F covered for first 20 min. Lowered temp to 425F for 10 min uncovered.  Lowered to 400F for last 12 min.

Ingredients:
- 200g oats
- 300ml almond milk
- 1 small mashed banana
- 1 tbsp @sweetfreedomuk cinnamon syrup
- handful of mix seeds (we used sunflower seeds, flax seeds, and dessicated coconut).

Method:
1) In a bowl mash the banana and leave to the side.
2) In a pan combine the oats and milk and add to heat. After a minute or two add the mashed banana, cinnamon syrup, and seeds. Heat until oats are desired consistency. You can always add more liquid if the mixture is too thick.
3) Time to add your toppings and enjoy!

Keto "bageled" eggs

Ingredients:

2 hard boiled eggs

2 oz cream cheese

Seasonings of choice (I used everything bagel seasoning, cayenne powder, garlic powder, and salt)

Directions:

Peel hard boiled eggs and discard shells.

Slice eggs in half and remove yolks. Place yolks into a small bowl.

Add cream cheese to bowl and mash with a fork until combined with the yolks. Optional: you can add your seasonings during this step or sprinkle them over top. I would personally add cayenne, garlic powder, and salt (any powdered seasoning you want to use that won't get ruined by the mashing) during this step.

Using a spoon, form the yolk and cream cheese mixture into balls and add it to open egg halves, or simply spoon it into the open egg halves, evenly distributing it between the 4 halves.

Sprinkle the top with desired seasonings and serve (I used everything seasoning on top since adding it during the mashing step would break up the little seeds and onion pieces. Plus it looks nicer in my opinion). Nutrition information:

Calories: 356

Fat: 30g

Protein: 16g

Carbohydrates: ~2-3g

You can multiply this recipe to serve as many as you need. I'd use 1 oz cream cheese per egg, and obviously a larger bowl if you're making more.

This was amazing to create with. Craziest part is I turned everything purple with it and then magenta but you’ll have to watch the story to see that. Taste was a bit more flavorful than a white cauliflower but that could all be in my head and the technicolor synapses were playing games with me. Either way. Need more @imperfectfoods if there’s any still left.

- 2 lb boneless skinless chicken thighs
- 1 large onion, thinly sliced
- cilantro, chopped to garnish
