Happy MemorialDay loves! Thinking of making this DAIRY FREE RANCH pasta salad with CHIPOTLE SHRIMP for dinner tonight! Throwing it back to this meal, because currently I’m enjoying my last few hours of the beautiful long weekend. It has been such a nice weekend filled with bike riding around the city, eating lots of delicious food, drinking delicious cocktails and enjoying some relaxation with my boyfriend. I managed to squeeze a little work in there! How was your weekend? •

Deets: @marinadelreyfoods Shrimp boiled then tossed in chipotle hot sauce and coconut aminos (I used @sietefoods Sauce), avocado and eatbanza pasta with tomatoes and sautéed spinach and this ranch sauce. Ranch sauce (makes enough for a whole box of pasta): 1/2 cup @kitehillfoods yogurt, 2 teaspoons @woodstockfoods tahini, 1 tablespoon fresh chopped dill, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1 tablespoon lemon juice and salt/pepper to taste.

3-4 boneless, skinless chicken breasts, cut into bite-sized chunks
4-5 medium zucchini, rinsed and spiralized (or a pack of store-bought Zucchini Noodles)
4 tablespoons butter, divided
2 teaspoons minced garlic
1 tablespoon hot sauce (we used Sriracha)
1/4 cup (60ml) low-sodium chicken broth
Juice of 1/2 lemon
1 tablespoon minced parsley
1 teaspoon fresh thyme leaves
Crushed red chili pepper flakes, optional
Slices of lemon, for garnish
Marinade 
2 tablespoons olive oil
1 tablespoon hot sauce (we used Sriracha) or 1 teaspoon  chili powder
2 teaspoons salt
1 teaspoon fresh cracked black pepper
2 teaspoons garlic powder
1 teaspoons Italian seasoning

DIRECTIONS
1. Slice chicken breasts into bite-sized chunks and combine with olive oil, salt, pepper, garlic powder, Italian seasoning, and hot sauce or chili powder, mixing until evenly seasoned. Marinate in the refrigerator for 30 minutes to one hour.
2. In the meantime, wash and trim the ends of the zucchini. Using a spiralizer, make the zucchini noodles, then set aside.
3. Bring the marinated chicken bites to room temperature and heat two tablespoons butter in a large skillet over medium-low heat. Gently stir-fry the chicken pieces on all sides until golden brown. Remove the chicken bites from the skillet and set aside to a plate. You might have to work in batches to avoid crowding the pan and have steamed chicken instead of browned. 
4. In the same skillet over medium-high, add two tablespoons butter, lemon juice, hot sauce, and chicken broth. Bring to a simmer and allow to reduce for 1-2 minutes, stirring regularly. 
5. Stir in fresh parsley and minced garlic, then add the zucchini noodles and toss for two to three minutes to cook it up. Allow the cooking juices to reduce for one minute if the zucchini noodles render too much water. Add the chicken bites back to the pan and stir for another minute to reheat.

Pan-seared salmon with tahini-miso sauce, served with a salted shaved cucumber salad—an easy dish that comes together quickly for a healthy delicious weeknight meal. .⠀⠀
On a mandoline, thinly cut a few small Persian cucumbers, place in colander and toss with about 2 tsp kosher salt. Let sit and drain over the sink or a bowl. Cucumbers should give out some liquid and soften a bit. Meanwhile, make the sauce + cook the salmon.⠀⠀

Tahini-miso sauce: In a small bowl, mash together 1 Tbsp white miso and 2 Tbsp tahini with a fork. Stir in about 1 Tbsp sesame oil and whisk with fork until smooth. Add a bit more oil if needed. Splash in a bit of warm water to thin out the mixture, keep stirring until well-combined and smooth. Add in about 1 Tbsp rice vinegar, continuing to whisk, drizzling in more warm water if you’d like to have a thinner sauce. Crush a small garlic and combine with tahini mixture. Taste, adjust seasoning to your liking; add a bit of fish sauce if you need it to be a touch saltier (omit altogether if things are already flavorful). Set tahini-miso sauce aside.⠀⠀

Cut 1 lb. of salmon into ½ inch slices. You should have about 6-8 pieces. In a hot cast iron pan (or nonstick pan), add some neutral oil and sear the salmon slices on high heat (in batches if necessary as you don’t want to crowd the pan), about 2 min on one side, flip and cook for about 30 sec-1 min on the other side. On a serving plate, spoon on some tahini-miso sauce, place seared salmon on top, serve with salted cucumbers, drizzle more tahini-miso sauce all over, sprinkle with scallions, sesame seeds and shichimi togarashi. Should serve 2.⁠

Let’s talk habits & behaviours. Let’s face it, gaining weight is easy, get 2 tubs of Ben and Jerrys and sit on you’re a** all day. Losing weight is also easy, slash carbs, sodium and crash diet for 4wks to drop a tonne of glycogen and water. What’s hard however is losing weight (and fat) and KEEPING IT OFF. As seen by the pic, though it shouldn’t be like this, society or our “culture” these days almost WANTS us to get fat and as a result, in long-term studies of weight-reduced children and adults, 80–90% end up back to their previous weight (McGuire et.al., 1999) meaning that to lose weight AND keep it off, something else has to happen and that is usually the development of sound, nutritional, behavioural and lifestyle changes/habits that are adhered to long term

Common sense right? Chose the apples over the burger, walk instead of drive, keep an eye on your weight etc.

Made this quick lunch just for one serving. Double up for more

What you need for one serving
shrimp ( about 6-8)
Corn (fresh or frozen. I used fresh )
Black beans ~ 1/2 cup
Brown rice with quinoa mix (you can use only brown rice or just quinoa) ~ 1/2 cup
Half avocado
salt and pepper to taste
Olive oil or cooking spray
hot Cajun spice
Garlic powder
Lime 
Habanero peppers (optional - I just love super spicy food)
Fresh Cilantro to garnish .
-Assemble the rice, corn, beans, avocado
-cook the shrimp with either olive oil or cooking spray.  Add salt and pepper to taste along with Cajun spice and garlic powder.

Naturally, a calculated meal plan appears to be the platinum level of nutritional servicing and care. Full recipes are moulded to one’s likes, dislikes and allergies. Not to mention the ideal energy balance for a nutritional goal. But on the face of it, how useful is this approach for an individual’s long term progress?

There is an immediate problem with such a system. That is what happens when one deviates from the plan. Such is its formulaic rigidity, the likelihood of deviation is extremely likely - especially if the individual has a social life. Even more so if that individual eats what they actually want on any given day. What occurs after one goes ‘off plan’ is unknown and unaccounted for. In the customer’s mind it is the meal plan which achieves the goal. So if one has failed at the meal plan, then they have failed entirely. Little do many customers know, it is a calorie deficit (regardless of food type) which achieves the fat loss goal. -

But feelings of failure derive from one’s inability to become empowered to make their own nutritional decisions based on learned knowledge. They do not enable one to practically learn about portion sizes, flexibility and adjustment. -

What if Tuesday comes and one does not want chicken and rice for lunch and dinner. What if they would prefer salmon. Or steak. Or scrambled eggs. Being accountable and aware of our own decisions enables us to form our own meal plan in accordance with our education and our goals. And it is often more enjoyable and powerful.

To pay for a rigid meal plan is to embark on a nutritional journey with immaturity. But basing your diet on organized, accountable, free-willed choices means success will have more longevity, whilst also being responsible and mature.🔥

DAIRY FREE BAKED STUFFED SPINACH and RICOTTA SALMON! Swipe to see the close up. SO delicious!!!! Stuffed salmon today and it was so simple and a major game changer. Paired this with my last piece of sweet potato toast topped with avocado 🥑 and cucumber noodles with tomatoes, dill, parsley, red pepper flakes and a tahini drizzle. Hope you’re all having an amazing weekend. •⠀

Deets: sweet potato toast with avocado and hemp seeds, wild salmon...sauté some spinach with garlic and toss with dairy free ricotta) cut a pocket in the middle of the salmon and stuff the filling And Brush with olive oil and season with salt plus herbs of Provence then bake on 400 for about 12-15 minutes depending on thickness. Serve with spiralized cucumber and tomatoes with dill and tahini.⁠

Deets: sweet potato toast with avocado and hemp seeds, wild salmon...sauté some spinach with garlic and toss with dairy free ricotta) cut a pocket in the middle of the salmon and stuff the filling And Brush with olive oil and season with salt plus herbs of Provence then bake on 400 for about 12-15 minutes depending on thickness. Serve with spiralized cucumber and tomatoes with dill and tahini.⁠

Method 👩🏻‍🍳🍫⁣
1. Preheat the oven to 170 degrees then mix together all your dry ingredients except the chocolate chips.⁣
2. Melt together your dark chocolate, coconut oil and syrup then stir through the dry mix.⁣
3. Mash together your eggs and bananas then fold into the mixture.⁣
4. Line a loaf tin with baking paper, transfer the mix into it then top with chocolate chips and pop in the oven for 35 minutes. .⁣

Seriously have been naughty lately. I swear these are the best things ever hit me when I'm hungry.  I believe I'm only hungry because I probly ate  more carbs than I need to. But good news. Since the beginning of the year Don and I stopped eating breads, sugars, pastas, potatoes. And I'm officially off my pre diabetic pills.  In the beginning of It works it took me 9 months to get off 17 prescriptions. When I fell off the wagon it took me 6 months to get back on diabetic and blood pressure pills. I will not fall again! I will take supplements and do whatever necessary to stay healthy for my family!  Over a 120 pounds lost between the 2 of us.
