Keep roasts moist by adding a ripe banana peel to the bottom of the roasting pan before cooking. To prevent a chicken breast from drying out in the oven, cover it with a banana peel while cooking. .

Kickstart your week with some soft or hard boiled eggs! The quickest way to make them is in the Instant Pot. You don't need any special accessories and you can make as many as you need. I like to use the easy to remember 5-5-5 method. Just swipe to see how quick and easy it is!

The 5-5-5 Method:
1 cup of water
Eggs
Place the trivet rack in your Instant Pot, pour 1 cup of water into the pot, add the lid, close sealing lever, and cook at high pressure for 5 minutes. After the pressure cycle is done and your pot beeps, let it do a natural release for 5 minutes then flip the sealing lever for a  quick release. Immerse the eggs into a ice water bath and let sit for 5 minutes. Peel the eggs right away. Note: For a softer boiled egg, I use 3 minutes (instead of 5) at high pressure.

The 5-5-5 Method:
1 cup of water
Eggs
Place the trivet rack in your Instant Pot, pour 1 cup of water into the pot, add the lid, close sealing lever, and cook at high pressure for 5 minutes. After the pressure cycle is done and your pot beeps, let it do a natural release for 5 minutes then flip the sealing lever for a quick release. Immerse the eggs into a ice water bath and let sit for 5 minutes. Peel the eggs right away. Note: For a softer boiled egg, I use 3 minutes (instead of 5) at high pressure.

Chicken Tikka Masala •
Ingredients:
1/2 onion minced 
2 garlic cloves minced 
1/2 cup cherry tomatoes 
1 tbsp turmeric 
1 tsp cumin 
1 1/2 cups reduced sodium veggie broth 
1/2 cup baby carrots sliced 
1/4 cup frozen peas 
1/2 cup chickpeas rinsed 
200 grams (2 small) chicken breast
Salt and pepper to taste

Directions:
1. Spray a frying pan with non stick spray. Bring to medium heat. Add the minced onion, garlic and chicken breast. 
2. Once chicken is browned, and reaches 160°, remove from the pan. Add in the cherry tomatoes and 1/2 cup veggie broth. Mix well. Once the tomatoes start to soften add in the carrots, peas, chickpeas, cumin and turmeric. 
3. Mix well. Add the remaining 1 cup of veggie broth. Add chicken breast back into the pan. Sprinkle salt and pepper. Continue to cook until veggies have reached desired softness. Enjoy! 
Makes 2 servings ✔️
