Garlic Tagliatelle with mushrooms by @biancazapatka ⁣

Ingredients ⁣
* 400gr Tagliatelle ⁣
* 3 tbsp olive oil⁣
* 4 garlic cloves⁣
* 1 onion⁣
* 500gr mushrooms⁣
* sea salt, pepper, herbs⁣
* Pine nuts * nutritional yeast flakes⁣
* basil⁣
⁣
Instructions:⁣
1. Cook Pasta according packaging instructions in a pot with salted water until ‚al dente‘.⁣
2. In the meantime, peel and chop garlic cloves and onion.⁣
3. Heat up oil in a huge pan and roast mushrooms for about 10 minutes until roasted brown. Add garlic after 5 minutes and season with sea salt, pepper and herbs.⁣
4. In another pan roast pine nuts until golden brown.⁣
5. Pour off pasta, drain, add to the mushrooms and combine.⁣
6. Sprinkle with nutritional yeast flakes, season again to taste and serve with basil.⁣

PEANUT BUTTER & BANANA BARS
Great as a post-workout snack😋

INGREDIENTS (12 BARS):⁣
-3 very ripe bananas⁣
-1 cup peanut butter⁣
-1/4 cup maple/agave syrup⁣
-2 cups old-fashioned oats⁣
-1 cup sliced almonds or other nut/seed combination⁣
-1 tsp cinnamon (optional)⁣
-1 tsp vanilla extract (optional)⁣
⁣
INSTRUCTIONS:⁣
1. Using a hand or standing mixer, mix the bananas, peanut butter, syrup, cinnamon (optional), and vanilla extract (optional) until very smooth.⁣
⁣2. Add oats (2 cups) and almonds (1 cup) and mix until combined.⁣
⁣3. Turn out onto a parchment covered baking dish (about 9x9 inches). Press and flatten with a spatula until evenly distributed.⁣
⁣4. Bake at 350 degrees for 30 minutes, or until golden brown on edges.⁣
⁣5. Allow to cool completely before cutting bars.⁣
⁣6. Store at room temperature for a week or freeze for up to 6 months in an airtight container.⁣

Tonight I’m loading up on my homemade chips and The absolute BEST Vegan Queso ever! If you want to break out a vegan recipe to truly truly wow your guests, especially ones that aren’t vegan, this IS IT. I worked hard to perfect this recipe and it’s one of my faves and of course, just 8 ingredients!

This week I’ve had no sense of time and working incredibly long days. But the thought of weekend being just around the corner is a warming thought. Happy weekend my friends!! I know you guys love my quick & easy dinner ideas, so today I’m sharing a recipe that I’ve been LOVING lately, especially since it incorporates tons of soft foods bc that’s all I can really eat since my surgery! (Smoothies, steamed veg/squash, beans, oats, etc.) I definitely miss my crunchy foods like chips, carrots, and apples haha ;) anywaysss this Italian bean bowl is sooo tasty and it all comes together in ten minutes, so it’s perfect for any busy day (or if you’re lazy and don’t want to cook😅)

RECIPE:
1️⃣chop up a delicata squash (or your favorite kind) and air fry it for 10-15 min at 400 degrees, shaking halfway through
2️⃣meanwhile, sauté 1/2 an onion, 1 cup sliced mushrooms, and 1 bell pepper with 2 cloves of minced garlic, 1-2 tbsp tomato paste, and tons of Italian seasoning until soft
3️⃣add cooked beans (I usually use 3/4 cup) and 1/2 a can of diced tomatoes to the sautéed veg and simmer until everything is warm
4️⃣add your roasted squash and the cooked bean/veg mixture to a plate and top with your fav healthy fat (I used hemp seeds post-pic)
5️⃣DEVOUR🤪

I LOVE this verse bc it reminds me that HE is in control and working for our good!! It’s easy to get stressed about life and confused as to why certain things are happening to us, but we’ve got to fix our mindset and remember that it’s all part of His grand plan and looking back it’ll all make sense and we’ll be reminded of how GOOD GOD IS!!❤️

Despite my listening to my body and skipping my early workout this morning, I couldn’t skip on #smoothiebowlsaturday 🤤 this is literally what I look forward to every weekend #judgeme. I’m literally obsessed with the texture and how it fills me up for hours!! Perfect fuel for the Trader Joe’s run I’m about to make 🤩 .
Recipe:
• 1/2 frozen banana
• frozen spinach
• frozen cauliflower rice
• frozen strawberries
• 1 scoop @gardenoflife vegan vanilla protein
• 1 tsp @nocow vanilla maple fluffbutter
• 3/4 cup @lovemysilk unsweetened vanilla cashew milk

The Clean Label Project found that “approximately 75 per cent of plant-based protein powders had measurable levels of lead. In addition to lead, the plant-based powders contained mercury, cadmium and arsenic.” Plant-based proteins may have higher contamination levels because the plants are especially prone to absorbing heavy metals from soil, says Sean Callan, Ph.D., a neuroscientist and director of operations at Ellipse Analytics, the lab that tested the protein products. Because of this many are now shying away from vegan protein powders.

My appetite has been almost non existent this week and I’m finally starting to feel a bit better so thought it best to get some nourishing food in me 😋 Here we have @aldiuk chickpea fussili with @lomalindauk tuno, sweetcorn 🌽, red onion 🧅 and @morrisons free from mozzarella 🧀 (which refused to melt)! All mixed with a bit of Chippa mayo 🙌🏼 oh and the best bit? A solid 40g of protein 🎉-
