🌱In case you’re wandering why there’s baking soda, it removes the acidity from the tomatoes.😋 This was delicious......
🌱Recipe (oil-free option too): 🔸Soak 1 cup cashews in hot water for 1 hour. 🔸Press and drain 1-14oz block extra-firm tofu. Cut into approximately 3/4-inch cubes and bake on lined sheet at 400F until lightly golden but not crispy, about 10-15 minutes. 🔸Blend soaked cashews until smooth, adding unsweetened non-dairy milk little by little as needed (oat is best) until smooth. 🔸Blend 3 large roughly chopped tomatoes. 🔸Grind with pestle and mortar or blend in small food chopper with a little water: 1-inch sliced ginger, 4 cloves garlic, 1 minced green chili. 🔸Sauté in a little neutral flavored oil (or water) 1-1/2 tbsp garlic/ginger/chili mixture about 1 minute. (Do not burn.) 🔸Add blended tomatoes and simmer until thickens. 🔸Add 1/4 cup cashew cream and simmer a few more minutes. 🔸Add 2 tbsp tomato paste, 3/4 tsp hot red chili powder (not Mexican), 1 tsp Garam Masala, 1 tbsp maple syrup and mix well. 🔸Add 1/4 tsp baking soda and stir to incorporate until bubbles disappear. 🔸Add remainder cashew cream (or as much as desired). Cook another couple minutes. 🔸Stir in tofu and cook and simmer another few minutes, adding water as needed until desired consistency. 🔸Serve with chopped fresh cilantro. Adjust salt, maple syrup and cashew cream to taste.

CHOC COOKIE DOUGH SLICE ~ who wants a bite? ✨🍪

Such a deeelish afternoon snack for when those 3pm hanger feels hit🙈 I always make sure to have a batch of something sweet + wholesome made up for the week ~ and this slice is perfect for that, to enjoy straight from the freezer. Basically turns into cookie dough ice cream slice👅

Packed full of protein, high in fibre, calcium + iron🌱 seriously delicious, and just as good for you as it tastes. Make it now!!

RECIPE
Base:
150g pitted dates
100g oats or buckwheat
1 scoop (40g) @pranaon coconut milk plant protein 
1/4 cup fortified plant milk .
Cookie dough:
1 can chickpeas, drained and rinsed 
2 tbsp nut butter
2 tbsp cacao powder 
50g pitted dates, soaked
1/4 cup fortified plant milk
Pinch of salt
.
1️⃣Blend base ingredients in a food processor to form a ‘dough’ and press firmly into a baking paper lined container.
2️⃣Blend cookie dough ingredients until super smooth, then spread on top of base.
3️⃣Place in freezer to firm for a few hours before slicing.
ENJOY!!💛💛

🌱😍 Homemade pan-fried veggies steamed bun! 📷 by @woon.heng 🚨🚨Recipe: (yields 20-25 small buns)⁣⁣
🍃Dough⁣ ingredients:⁣
~ 1 3/4 cups all-purpose flour⁣⁣
~ 1 pack active yeast (2 1/4 teaspoon)⁣⁣
~ 3 teaspoons sugar⁣⁣
~ 3 teaspoons oil⁣⁣
~ 2/3 cup warm plant-based milk⁣
⁣🍃Filling: ⁣⁣
~ 4 cups finely shredded cabbage⁣⁣
~ 1 cup chopped kale⁣⁣
~ 7-8 mushrooms, soak until soft & slice thinly⁣⁣
~ 1 carrot, finely chopped⁣⁣
~ 2 teaspoons thinly sliced ginger, 3 cloves minced garlic⁣⁣
~ 2 tablespoons soy sauce, 2 teaspoons stir fry sauce, 1 teaspoon sugar, a pinch of white pepper⁣⁣
~ salt, oil, sesame oil, minced ginger, chopped scallions⁣⁣
⁣⁣
✅Mix flour, yeast & sugar in a bowl, then add-in wet ingredients. Using a dough hook, knead the mixture until a soft dough forms. Turn dough onto a floured surface, & knead for 4-5 minutes until you see a smooth top. Let the dough rest in a bowl for 30 minutes, covered. ⁣⁣
⁣✅Meanwhile, in a heated pan with 2 teaspoons oil, sauté ginger, mushrooms & garlic until fragrant. Add cabbage & sauce, cook for 2 minutes & spoon mixture into a bowl. Continue to sauté kale with a little oil & salt, then add to cabbage mixture along with chopped scallions, minced ginger, carrot & drizzle of sesame oil.⁣
⁣✅To make the buns, turn dough onto a floured surface & roll into a log. Divide log into 20-25 pieces & roll each one into a ball. Take 1 dough & flatten it slightly with your palm, then using a roller, roll it to about 3 inches round by leaving a good thickness in the middle. Place a heaping tablespoon of filing & pleat to seal. ⁣⁣
⁣✅In a heated pan with a drizzle of oil, place buns sealed side down & pan fry for 30 secs until the bottom turns light brown. Slowly add in hot water to cover ~1/3 of the buns, place lid over & turn heat to low-med. Cook until all water is absorbed.⁣
Serve warm with homemade chili oil in soy sauce🤗

Chocolate oat bowl ~ had a 🍫 craving morning with this full-on chocolate oatmeal bowl.  These oats were so satisfying and definitely met my chocolate 🌠 ❤️❤️❤️ Have a lovely Saturday 🌞💛 This bowl was made with:
1/2 cup Quick Oats (organic)
1¼ cups oat  milk (or your favourite)
1½ tbsps cacao powder
1 tbsp chia seeds
1-2 tsp non-dairy chocolate chips

Optional:
Cacao nibs - sprinkle to liking
Favourite berries for garnishing

Mix together the oats, oat milk, cacao powder, chia seeds and half the chocolate chips in a microwave safe bowl and microwave on high for 90 seconds. Top with more chocolate chips, cacao nibs and berries. Enjoy!

Had lunch at @tansyspantry today and I have to say I was blown away by how incredible the food, atmosphere and service was! Even something as going in for a quick lunch is made such a treat here; I started off by having their incredibly punchy & flavoursome five bean chilli on nachos with a green reviver smoothie, finished it off by having a banoffee waffle which was incredibly toothsome and packed with flavour 🍌😋 all in all it is some of the best food I've had on the island 🌱😙✌🏻

This is my favourite lunch at the moment and ive been having a variation of a wrap for a while now.

Todays wrap had falafel,avocado,spinach,red pepper,cucumber,red cabbage and chilli sauce.

I also had a berry smoothie with frozen raspberries and blueberries,flaxseeds,chia seeds,water,banana and dates.

We are off to spend another day in the sun on the slopes ⛷ and needed some healthy eats to snack on! This yummy bread hits all the right spots! I whipped this up to take with us today & I think it’s going to be a regular snack around the Cullen house 🏡😍!

Ingredients:
Combine all of below in large mixing bowl:
2 medium to large ripe bananas, mashed 🍌
1 c organic pumpkin purée 🎃
2 organic eggs 🥚
2 tsp pure vanilla extract
1/4 c organic pure honey 🍯(Try to use a local honey!)
1/4 c melted coconut oil 🥥

Combine below in small mixing bowl:
1 c organic gluten free oat flour 
1 c organic cassava flour
1 tsp organic cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt

Add dry ingredients to wet & mix until combined. Stir in 1/3 c @lilys_sweets mini chocolate chips. Pour into baking loaf pan lined with parchment paper. I topped w 1 tbsp more chocolate chips. 🍫

Bake at 350 for 45-50 min or until toothpick comes out clean. I covered and refrigerated overnight then sliced the next morning! ❤️

Ingredients:
4 vegan pies ( I used @lindamccartneyfoods )
700g Vivaldi salad potatoes, halved
 4 carrots sliced
1 broccoli, cut into florets
6 parsnips, quartered 
2 onions
4 garlic cloves
2 tbsp vegan butter 
Salt & pepper to taste
Dried herbs
Fresh rosemary & thyme
Onion gravy (or any veg gravy you prefer)

Method:
•Bake pies as instructed.
•Peel and prepare potatoes, carrots & parsnips. Chop broccoli, cut onions into quarters and mince 2 of the garlic, leave the other 2 with skin on for roasting.
•Par boil the potatoes, parsnips and carrots. Drain off and transfer to a large oven dish. Season well, mix in the minced garlic and a few sprigs of thyme & rosemary plus the dried herbs. Toss in the vegan butter, then add the rest of the garlic and onions. Cook in a preheated oven (190° fan) for 30-35 minutes or until cooked through.
•Boil the broccoli, drain and add a little more butter and seasoning.
•Prepare your gravy and load up your plate with all the vegan roast components. ☺️

Op het moment dat ik minder vlees ging eten en opnieuw toen ik meer veganistisch begon te eten, was voor mij het leukste effect dat ik veel creatiever werd met koken. Doordat bepaalde ingrediënten wegvallen komen er nieuwe ingrediënten en bereidingen voor in de plaats. De ene keer is dat wat uitdagender, maar meestal is het heel simpel. Zo is melk makkelijk te vervangen door een plantaardige variant en boter door margarine (van @becel_nl). Zo maakte ik dit lekker voedzame groentesoepje (met volkoren gerst, bloemkool en boerenkool) met daarbij broodjes met vegan knoflookboter. Want meer knoflook is meer beter.
