Light healthy dinner idea - this fresh citrus grilled shrimp and zoodles! 
A cilantro, lime, and orange vinaigrette is both a marinade and dressing for the dish, which can be served warm with sautéed zoodles or room temperature/cold as a salad.

Grilling season makes me so happy 😍 These blackened chicken thighs we made tonight were UNREAL. I used the marinade from the sheet pan supper (same quantities listed in the recipe), and Bryan said I need to start selling it by the bottle 🤣 I marinated 6 @butcher_box bone-in skin on chicken thighs for 2 hours, then discarded the marinade and grilled over medium high heat for 25 mins (flipping every 5 mins). You want an internal temp of 180 for bone-in thighs. Crispy skin and tender inside - so good!! With some grilled squash and watermelon 🤤

These are only 4-ingredients, have no flour, TONS of fiber, and a naturally sweetened just from bananas🥰. I like to use @caminoamigos unsweetened chocolate chips because they only have 2 ingredients: cacao mass and cacao butter🙌🏼.

And because they are loaded with fiber they are oh so satisfying 😉. Fiber is our friend👯‍♀️.

Ingredients:
50 grams Chorizo Mince
3 Eggs
1 cup Spinach
10 grams Red Onions, thinly sliced
2 tbsp Manchego Cheese, shredded
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Procedure:
1. Sautee chorizo in a non-stick pan.
2. Add red onions and stir until caramelized.
3. Add spinach and sautee until wilted.
4. Stir in eggs.
5. Fold in cheese and serve. ➡️ Nutritional Information:
Energy - 466 kcal
Protein - 33g (30%)
Fat - 34g (67%)
Carbohydrates - 4g (3%)

1 lb shrimp (deveined tail off)
1 cup coconut flakes 
1 egg beaten
1 tbsp garlic powder 
1 tsp paprika (or chili powder or old bay)
1/2 tsp onion powder 
1/2 tsp salt 
Put egg in one bowl and other ingredients in the other. Coat shrimp in egg and coat in coconut spices mixture. Easy Classic Coleslaw
Ingredients: * 3 peeled and shredded carrots (I used my food processor to shred but you can use a cheese grater)
* 2 cups shredded red cabbage (I used my food processor to shred the cabbage, but you can just slice it thinly with a knife)
* 3 cups shredded cabbage
* 2 tbsp chopped cilantro or parsley, whatever you prefer * 1/2 cup paleo mayo (homemade or store bought)
* 3 tbsp Dijon mustard
* 1 1/2 tsp apple cider vinegar
* 1 tsp ground pepper
* 1 tsp pink himalayan salt
Instructions:
1. Mix all ingredients in a bowl until well incorporated. Serve and enjoy 😉 Refrigerate any leftovers.

Welcome to my new normal. Currently focusing on my autoimmune disease, healing gut issues (leaky gut, low stomach acid, gluten allergy, etc), hormone balancing, & thyroid health... there is a light at the end of this tunnel 🙏 I have to keep believing! 30 days left of dairy-free, grain-free/no starchy carbohydrates, anti-microbials, liver support and a LOT more healing pills/supplements. I’ve lost a lot of weight since things went crazy back in January... even though it’s been slowly developing/getting worse for over a year and I never knew 🤷🏻‍♀️.... All I can say is - If something doesn’t seem right (sweating while eating breakfast, racing heart rate while laying in bed, use to be able to sleep and now not even feeling tired) — go seek help. Functional doctors ALWAYS! Holistic is the ONLY way to go! I’ve dealt with so many doctors & they have helped so much.🙏💜

Everything I’m going through is such new territory... just taking everything one day at a time is the best I can do. I’ve been wanting to share this for a while.... but it’s been so hard😔.. either way.  Now is the time.... I know others have to be going through this or maybe they already have, and I can connect/learn from them. This isn’t for attention... it’s to create awareness and encourage action if something doesn’t feel right! 👊 YOU are in control!
