PEANUT STIR FRY ✨ One of the most common questions I get from my one-on-one nutrition counseling clients is how to make quick, nutritious, satisfying meals when you feel like there's not even enough time to grocery shop. Trust me, I totally get it 😅.

My biggest tip? Frozen veggies + fruit 🙌🏼 So many people overlook frozen veggies and fruit because they think they aren't as nutritious as fresh, but this isn't the case ✨.

Did you know that frozen veggies and fruit can actually be MORE nutritious than fresh, since they're picked and frozen at the peak of their ripeness?
✨Frozen veggies are also usually pre-chopped, meaning less prep-work for you.
✨They can help reduce food waste, since they keep for much longer than fresh.
✨They can also be MUCH less expensive than fresh!

I’ve been looking forward to this lunch all day 🤤
The key to a good bowl for me is to add lots of textures, flavors and colors! I get inspiration from food I’m craving or food that I eat when I’m out. This helps me switch it up! This bowl in particular was inspired by the new Panera Bread Mediterranean warm grain bowl, but I made it with my individual taste preferences in mind. That’s the thing about food inspo, if you see something you think you’d like to try, don’t be afraid to customize it to your own needs and wants.

Vegan Mediterranean Buddha Bowl:
🌾Cook the quinoa according to package instructions. I used @ancientharvest’s organic tri-colored quinoa.
🍅I prefer cooked over raw tomatoes so I cut some organic grape tomatoes in half then sautéed them in a skillet with pink slat, cracked black pepper and avocado oil for a few minutes.
🥬Add greens of choice to the base of your bowl: I wanted arugula but the store was out so I got @organicgirl mixed greens.
🥒Dice 1/4 of a fresh cucumber for extra crunch and hydration.
✨Add chickpeas and @hopefoods classic hummus (my favorite!) for protein and texture.
🍋Slice a lemon wedge or circle then sprinkle the bowl with @manitobaharvest hemp seeds for extra protein and omega-3 + @soomfoods tahini and a little EVOO for healthy fats and extra deliciousness!

I want something simple & delicious when it comes to lunch and this egg salad is one of my favorites to throw together😍 all ya need are a few ingredients & you can top it on toast, sweet potato, salad, so many options🙌🏻 I topped it on some toasty bread yesterday & it hit the spot! shared in my stories what I used to whip this up. happy hump day🥰

what ya need: 3 hardboiled eggs + 1 tbsp dijon mustard + 2 tbsp mayo made with avocado oil + sea salt/pepper/ garlic powder all to taste. mixed together & topped off with red pepper flakes, everything bagel seasoning, & fresh dill. so good🙌🏻

👉🏼There’s a difference between how long food LASTS and how long before it starts to look/taste less appealing. 👌🏼Technically all of these meals are edible when stored in the fridge in a container for a week. But I recommend eating them within 4-5 days.

It’s crazy to think that the girl on the left truly didn’t know the STRENGTH she had. 💪🏻 I got to the point where I told myself it was time to just accept the fact that I’m always going to be a big girl. THE big girl. I felt so alone in that because I was always the only big one in my family, friend group, sports teams, the gym... the list goes on! I never thought I’d get to where I am today and I’m incredibly grateful. It still feels so surreal! Seeing old photos like that and remembering going to the gym in huge hoodies and leggings or yoga pants, trying to hide what was underneath. (That’s also one of the many reasons I love @buffbunny_collection because they are SO CUTE and carry plus sizes!!) I’m thankful that I learned DISCIPLINE & CONSISTENCY👊🏻 without it, I would not have stuck to my workout and diet regimens! STAY STRONG. Push through those exhausting days and take the extra time to meal prep and PLAN ahead 🙌🏻 it’s worth it✨⁣

Instagram vs. Reality!  It’s all about the angles....not just when trying to have an “ab” picture!  And I’m a big fan of separating ALL the laundry and then scooping it up to wash - and that means that piles my live on the hall floor for a bit. •
I do my best to be authentic.  To connect with people who are similar or like-minded.  I’m not going to pretend to be someone or something I’m not because that doesn’t serve any purpose, and what kind of example does that set for my kids? •
I’m a mom of 2 who has adopted a lifestyle of health and fitness.  I volunteer often and am involved in PTOs and other school groups.  When I workout, I workout.  I don’t dance or pause to lip sync, because I’m thinking about what I’m doing, not about creating content.  My before and after pictures don’t have any “sucking in,” because again, what purpose would that serve?  How can someone else hope to achieve results that aren’t even realistic?

I’m not super hard core, because while I do my best to eat clean, we eat pizza sometimes....and I like craft beer...and wine.  I want people to know that perfection is not an expectation for me.  For me, it’s consistency. •
Here’s the thing, I can’t do it for you.  I can’t prep hour meals or press play for you.  I can give you the tools to help you achieve your goals. What I can do is not give up on you.  I can be there day in and day out, because there will be good days and blah days, but those days will come and go, but the support won’t end. •
When you are ready, I’ll be here.

Ways to preserve half a box of browning bananas: 
1. Dice up into chunks and lay them on a cookie sheet to freeze. Once frozen, transfer them to a ziplock bag. This makes for easy smoothie prep for breakfast, or a nice ice cream alternative treat.

2. Peel and freeze whole. This way they are ready to go for any future baked goods. Or can be used in smoothies if the pre cut ones run out.

3. Freeze with peel on. You won’t have to transfer to a secondary bag but it can get messy peeling them when they thaw.

Now all the scraps go into my compost bin that’s hanging out in my garage.

1lb ground turkey 
1tsbp Lawrys seasoning 
Romaine lettuce 
Cherry tomatoes 
Pickles

A meal prep Sunday post coming to you on Wednesday. I gotta get better about that 😅 But here we go. For breakfast healthyish oatmeal that I'm also tossing some chia seeds in for extra umph. Lunch is taco bowls with ground turkey, spinach, cheese, black beans, corn, quinoa, and cucumbers. Dinner is homemade chicken salad full of chicken, raisins, sunflower seeds, and almonds that is put on top of fresh spinach and some wheat thins on the side. Some fresh mango and red grapes for snacking.

It’s here! My first @purplecarrotxo box and I’m so very excited! This is going to make my #vegan #mealprep so much easier. Pro-tip, it works even better if you’re only making meals for one, because you’ll have leftovers

At first glance: the box comes very well insulated, although I am a little disappointed at how much plastic packaging was used. It does make it easier to distinguish which ingredients are used for which dish. Hopefully they can reduce their plastic use in the future as they progress

I really enjoy how everything is labeled! Rather than having to consult a sheet of paper I have most likely lost in order to figure out which ingredients I need, I can just grab one of the packages (with a couple odds and ends that are too large or fragile to be in the bag) and get started

My very favorite part after just unboxing, however, is the book they send. Instead of sending single menu cards like other meal delivery companies I’ve used in the past, they send you an entire booklet with all of the recipes from the menu that week (including extras you didn’t pick!). So far, I’m very pleased

I’ll keep you updated as I make dishes throughout the week, and give you my thoughts on difficulty, taste, and overall value of the service.

Alhamdulillah azie br lepas lunch. Actually azie prepare lunch ni pagi2 td sblm kuar dr rumah kul8.30am. Sbb arini azie settlekn mama pnye Desi akupuntur. So berbento la arini. Lepas siap masak, amik gambo sume, br mskkn dia dlm bento. Hehe. Gtuuuuu

Azie makan ape lunch ni? Okeyhhh, kbtln azie nk abeskn pape yg ade dlm peti esss ku. Maklumlah weekend ni long weekend, and nk balik kg sbb ade kenduri maka azie abeskn ape yg ade.

Pg td azie amik plant-based protein (baby spinach) and lunch ni azie amik animal-based protein (salmon belly @khayrbrand) + plant-based protein (asparagus). Menu azie ni sbnrnye menu yg bole dibuat Oleh kwn2 yg beratnya tgh statik. Selang seli kn stiap hari dgn karbo-kompleks meal vs low-carb meal. Barulah berat yg statik tu akn slowly reduce lagi.

 How many of you go to the store, buy fruit and then wind up tossing it out in a few days because it went bad and didn't get eatin? I know I have all the time! I am trying to get into the habit of prepping snacks as I am unloading the groceries. ●
This week we bought sugar snap peas, carrots, celery, strawberries, blueberries, and bananas.  When everything is prepped in baggies or containers  you or the kids can reach in the fridge and have a healthy snack.  Prepping like this makes it perfect to grab when you're in a hurry and on the go.  This took me less than 15 minutes to clean and prep all this.

I realized today that my number one meal prep tip, my number one weightloss tip, my number one macro counting tip and my number one cooking tip are all the same thing!

What is this magical tip that applies to all of these things?

USE A FOOD SCALE!!!!! Units of mass are inherently more accurate than units of volume because they aren't effected by things like how tightly an ingredient is packed in the cup or what size and shape you chopped it into. 👉👉CHECK THIS OUT 
A cup of flour can weigh anywhere from 4 ounces (113 grams) to 6 ounces (170 grams) depending on how its packed - that's a difference of 50%! Deoending on how they are sliced, one cup of sliced bananas weighs approx. 150 grams and a cup of mashed banana weighs 225 grams - again a difference of 50%! 50% can have a huge effect on how a recipe turns out which is why professional pastrychefs and bakers use scales for everything (now you know the secret). 50%  can also have a huge effect on your daily macros (and hence your weight loss). Once you learn to use a scale, and get used to it, it's actually faster than measuring and its obviously a hell of a lot more accurate!

If you’re main goal is to get stronger, weightlifting, or powerlifting, well then why are you constantly in a calorie deficit and doing cardio and H.I.IT. All the time? 
If your main goal is to lose weight for a significant transformation, why are you wasting your time doing a bro bicep/tricep day while having a cheat day like you’re the  Rock?

Working with purposeful leftovers tonight. Don’t you waste any energy feeling sad for me! This is meal prep at its best. You get to reinvent how you eat foods throughout the week! Roasted baby red potatoes from the other day. With all meal prep, you’re going to have to reheat to eat at some point. Let’s change them up a bit from the original cook. 10 minute dinners are my JAM, especially in the middle of the week, when I’m exhausted after a yoga class and feeling a sore throat coming my way. I’m all about easy healthy meals that make me feel good, fuel my body and are low stress... not to mention DELICIOUS. .

These shredded chicken tacos were so easy to make since I did a small bit of meal prep on Sunday. ➡️
1. Shred chicken, I used my instant pot and covered 3 chicken breast with bone broth and homemade taco seasoning (cumin, cayenne, paprika, oregano, garlic powder, salt) and cooked on high pressure for 13 minutes. Could also boil chicken until internal temp reaches 165 Fahrenheit. Then shred with 2 forks and 1/4 of the broth. 
2. White rice, I cooked on the stove 
3. A simple blend of chopped avocado, tomato, and butter lettuce
4. I toasted 2 @sietefoods cassava flour tortillas in a bare stove pan and for about 20-30 seconds a side or until small brown spots appeared
5. Assemble ingredients and serve with frozen organic green beans heated up in the microwave. Super easy, really nourishing post gym, and delicious!

Deconstructed lasagna soup - inspired by @pickuplimes ! 🍅 Absolutely delicious and no joke tastes like lasagna, well unless you’re an absolute carnivore. I didn’t have lasagna noodles or plant based ground protein, so I ended up using farfalle and firm tofu.

Ingredients:
- Firm tofu, diced
- 2 cups of farfalle
- 1 small carton of cremini mushrooms, diced
- A few handfuls of spinach
- 2 cans of diced tomato
- 3 cups of water
- 1 yellow onion, diced
- 2 cloves of garlic, minced
- 2 Tbsp of tomato paste
- 1/4 tsp of salt and pepper
- 1 tsp oregano and thyme
