Creamed Spinach Tortellini 🤩🔥

Ingredients 🍱:
1 pound of stuffed tortellini, cooked & drained (use your fave)
2 tbsp of flour
1 1/2 cups of half & half
1/2 tsp of salt
1/2 tsp of roasted garlic powder
1/2 tsp of fresh ground black pepper
1/4 tsp of nutmeg
1 cup of parmesan cheese
4 ounces of room temperature cream cheese
1/2 cup of smoked gouda cheese
16 ounces of frozen spinach, thawed and drained
a pinch of red pepper flakes

DIRECTIONS 👩‍🍳:
In a saucepan, over medium heat, melt 3 tbsp butter. When the butter is melted, whisk in the flour and cook for about 90 seconds until the flour taste has cooked out. Then, add in the half and half and stir well to combine. It’s a good idea to make sure the heat is on high at this point and as soon as it starts to thicken, lower the heat back to medium. Add in all of the other ingredients except the tortellini and stir occasionally to combine well and to prevent from sticking. Once the sauce is thick, toss in the pasta and serve.

For the shrimp!
1 pound jumbo shrimp, cleaned
1 tbsp of Old Bay Seasoning
1/2 tsp of salt
1 1/2 tbsp of olive oil
Toss the shrimp together with the olive oil, salt, and Old Bay. Get a skillet hot and then sauté the shrimp on both sides until they’re cooked through. Serve immediately.

😮I only had to buy mushrooms and tomatoes to make these meals happen. The rest I had in my pantry and freezer already.

💰Keeping money in the bank is really important to me this time of year. I’m saving up for gifts (hello holiday season around the corner!) and my solo Japan trip in February. APPLE CINNAMON PANCAKES ✨ Happy thanksgiving to all my fellow Canadians 🍂 I spent this weekend with family and I fully intend on spending the rest of the day relaxing + reflecting on how grateful I am for everything I have in my life, which definitely includes all of you 💛 Forever grateful to get to share with you all and do what I love everyday ✨ What are you grateful for? 🍂.

To make 👇🏼:
Combine 2 bananas, 1.5 cups of oats, 1 tsp apple cider vinegar, 1 tsp baking soda, 1 tbsp maple syrup, 1.5 cups of plant-based milk + 1 tsp vanilla in a high speed blender and blend until smooth. Cook like regular pancakes. While the pancakes are cooking, sauté 1 chopped apple in a tsp of cinnamon and a splash of maple syrup until softened and golden. Serve together with peanut butter, maple syrup + enjoy!

When it comes to milk here’s what you need to know! If you can tolerate cows milk and enjoy it then this is by far the most nutrient dense option. It’s also an excellent source of the BCAA leucine which helps to rebuild and repair muscle tissue. (Very important if you’re trying to lose weight or maintain your weight loss efforts) Opt for one with moderate fat levels as this will also help to improve satiety and give you a boost of fat soluble vitamins.💁‍♀️

In terms of plant based milk SOY MILK is by far the superior option. It is also a complete protein source (unlike other plant milks) and contains quite good levels of muscle building leucine. Buy one which is unsweetened, high in protein and calcium fortified. The less ingredients and the higher percentage of whole soy beans the better.
.
Almond, coconut, oat, rice etc are mostly water (most are also low protein and calcium and high in added sugar) so you’re better off making your own or investing in the Whole Foods items and eating more of them.

What do I eat?⁣🤔

We get this question all the time. Eat what you f*ing like. I am not saying don’t pay attention to food quality. But find the foods that you like, and eat that sh*t up, leaving some room to treat yo’ self. ⁣🥑🍩

Some ideas based upon your goal: ⁣
⁣
⚡️If you are in a Deficit - Avoid drinking your calories. Start by tightening up for your coffee. Try using MTC Oil, Super Creamer, &/or Fiber in your coffee.⁣
⚡️Try to avoid supplementing protein shake and have a meal with a protein source and fiber that can be savored, chewed, and wiil keep you satisfied longer. ⁣
⚡️Foods with a high water content, rich micronutrient profile, high fiber content, or are “heavy” (in terms of weight) are going to be your best friend (potatoes for example, along with other root vegetables). Your protein and carb selection is important, when in a deficit. ⁣
⁣
⚡️If you are in a Surplus - There is nothing wrong with eating lots of nutrient dense foods but there comes a point where you can’t shove more food down your throat.⁣
⚡️This is when you can start consuming your calories with shakes, smoothies, etc. These will digest faster. A surplus gives you more wiggle room for treats. Such as your favorite dressing on your salad, that piece of bread with your soup, or your favorite Starbucks drink.⁣
⚡️WHILE STILL BEING CONSCIENCE OF YOUR OVERALL FOOD QUALITY‼️‼️
⁣
⚡️If you are in a Maintenance - Lets find that sweet spot between the two. Making smart choices on maintenance calories could leave you “leftover macros”. Take these leftover macros and do whatever the “he double hockey sticks” you want with them.⁣
⚡️At the end of the day if you are satisfied and hit your protein goal, don’t worry about try to find something to fit your last handful of calories/macros.⁣

The best diet is one you can adhere to, so find what works for you & ride on that 🥳

The great debate on when to do cardio! .⠀⠀⠀⠀⠀⠀⠀⠀⠀
The reality is, it depends on your ultimate goal. If you’re looking for more cardiovascular endurance. You can put a bigger focus on it. It may also be better to do prior to weights. However you still should not eliminate weight training. It will actually help you especially with the muscular endurance.⠀⠀⠀⠀⠀⠀⠀⠀⠀
.⠀⠀⠀⠀⠀⠀⠀⠀⠀
If fat loss is your goal, the best time to do cardio would be after your weight training session. This way your glycogen stores are already being mobilized and you’ll be burning more fat. The best for fat burning is to actually combine weights and cardio together. .⠀⠀⠀⠀⠀⠀⠀⠀⠀
So if you’re like me you don’t do traditional cardio ever. 🤣 I just lift weights faster! But in all seriousness, I do more of the metabolic conditioning after my strength sessions for my cardio.⠀⠀⠀⠀⠀⠀⠀⠀⠀

The reality is, it depends on your ultimate goal. If you’re looking for more cardiovascular endurance. You can put a bigger focus on it. It may also be better to do prior to weights. However you still should not eliminate weight training. It will actually help you especially with the muscular endurance.⠀⠀⠀⠀⠀⠀⠀⠀⠀

If fat loss is your goal, the best time to do cardio would be after your weight training session. This way your glycogen stores are already being mobilized and you’ll be burning more fat. The best for fat burning is to actually combine weights and cardio together. .⠀⠀⠀⠀⠀⠀⠀⠀⠀
So if you’re like me you don’t do traditional cardio ever. 🤣 I just lift weights faster! But in all seriousness, I do more of the metabolic conditioning after my strength sessions for my cardio.⠀⠀⠀⠀⠀⠀⠀⠀⠀

One of the most significant things that has helped decrease my stress and anxiety is planning, scheduling, and prepping for my week. Every Sunday I sit down with my planner (yes an actual physical planner) and I plan out my week - work, meals, house work, appointments, etc. Having a visual laid out in front of me for the week helps me enter the week confidently and aware.

Meal planning and prep is one of the significant portions of this weekly scheduling. When I begin the week with a menu planned, the fridge stocked, and a few meals ready to go, it takes so much of the frazzle out of Monday.

Whether you’re married, single, or hustling seven kids, the principles I discuss in my blog post today will make such a difference for your week. I promise, once you start making meal planning a habit, you can’t go back!

boil all then reduce. Add rice and noodles and cook. Top with avocado, salmon, tomatoes, kale chips, mushrooms, cilantro, cabbage + scallions

Life hack: add ground bison to your ground beef when making meatballs. HOLY. YUM. These have garlic powder, turmeric powder, & onion powder. Once I mixed everything together, I rolled them up & let them simmer on the stove in a tablespoon of olive oil & 2 tablespoons of coconut aminos for maybe 15 minutes! That’s it. So. Dang. Good. 🍝 We are having ours over spaghetti squash, mushrooms, & spaghetti sauce.

As promised everyone 👌🏾Here’s the recipe to one of my favorite #mealprep meals. I get away with 5 meals and I usually have this one for lunch. Easy to take to work 😋 Enjoy!! 🔥Healthy chicken and Veggies recipe🔥

Prep Time: 10 min
Cook Time: 20 min

Ingredients:
2 medium boneless chicken breast- cut into 1/2in pieces
1 cup frozen or fresh broccoli florets
1 small red onion chopped
I medium zucchini or cucumber chopped
1 cup grape or plum tomatoes
2 cloves minced garlic 
1 tbsp Italian seasoning
1 tsp salt
1/2 tsp black pepper
1/2 tsp red pepper flakes (optional)
1/2 tsp paprika
2 tbsp olive oil
Jasmine rice or rice of your choice- serving of 4 on the side

Instructions:
preheat oven to 450F. Line a baking sheet with aluminum foil and set aside
Place the chicken and veggies in the baking dish. Sprinkle all the spices and garlic evenly over the chicken and veggies. Drizzle with the olive oil
Bake 15-20min or until the veggies are charred and chicken is tender
Place 1/2 or 1 cup of cooked rice into 4 to 5 individual prep containers. Divide chicken and veggies evenly amongst the containers. Cover and store in fridge up to 5 days or freezer up to 2 months.

1/2 tsp red pepper flakes (optional)
1/2 tsp paprika
2 tbsp olive oil
Jasmine rice or rice of your choice- serving of 4 on the side

Instructions:
preheat oven to 450F. Line a baking sheet with aluminum foil and set aside
Place the chicken and veggies in the baking dish. Sprinkle all the spices and garlic evenly over the chicken and veggies. Drizzle with the olive oil
Bake 15-20min or until the veggies are charred and chicken is tender
Place 1/2 or 1 cup of cooked rice into 4 to 5 individual prep containers. Divide chicken and veggies evenly amongst the containers. Cover and store in fridge up to 5 days or freezer up to 2 months.

Day 14/100 Challenge Myself 
This weekend I was completely occupied with outdoor activities. This am I get up and feel like I have gained a few pounds. Instantly crushed me down.

It’s just a mood swing I think, just know it is debilitating . There are moments I go through where I feel like I am failing, then I do a compare side by side and have to reassure myself that I am being accountable. Sometimes it works and sometimes it doesn’t.

As proud as I am of my weight loss, I do see the belly fat coming back and it brought me down. No, I haven’t gained any weight... and how do I know? I just do.

Menopause and sugar are a metabolic issue with me. No matter how I look at this, I have to be careful what I incorporate back into my lifestyle. Potatoes, rice and pasta are a huge No-No for me. 
Doing my macro counting I had decided to let it back in, I just can’t.

This is a journey no matter what. It’s about learning as I go. Becoming the best at knowing my own body and it’s needs are critical in maintaining my weight loss. 
Continue with No Sugar is the most important part of this.

My mood will pass... and so will my moment of self-doubt. I also think my moments of depression play a huge role in this as well, so more 🧘‍♀️ is completely necessary.

Don’t give up.. it is so worth the journey.

Lunch for me and Joe for the week: orange chicken or tofu and chickpeas with broccoli and rice. The tofu and chicken are coated in chickpea flour and pan fried before adding the sauce. I use frozen broccoli to make prep easier. 👍

Who's got Thanksgiving leftovers? 🙋‍♀️ Among those my parents sent home with us was the last 1/4 wedge of acorn squash, which was slow-cooked with cinnamon and brown sugar. I warmed it up for lunch and diced it into this salad 🌰🍏🍃

I work around 9-12hours a day training clients and also trying to improve myself and getting myself back in shape after 6 months of no training due to sports injuries then surgery. So if I can find time to prep my meals even if I'm working long hours and no cook at home you can do it too!

🍲creamy chicken noodle soup🍲it’s finally soup season - which means i am thriving!! this hearty recipe has the makings of all my favorite ingredients-veggies, chicken & egg noodles in a creamy (but healthy!) base. *tip-prep all of your ingredients before you start & you can have this done in about 30 minutes. enjoy!

📝RECIPE
3 tablespoons butter
2 tablespoons olive oil
2 tablespoons minced garlic
4 stalks of celery, finely chopped
1 sweet (or yellow) onion, finely chopped
2 cups of baby carrots, chopped
4 tablespoons whole wheat flour
3 cups whole milk
32oz of chicken broth 
1 cup frozen peas
4 cups chopped rotisserie chicken
1 tablespoon thyme (fresh or dried)
salt & pepper
Half of a bag of egg noodles
•
1. Melt butter & olive oil in a large Dutch oven or stock pot over medium heat. Add garlic & sauté for 3 minutes.
2. Add celery, onion & carrots & sauté for 6-8 minutes, or until vegetables are softened.
3. Add flour. Stir to coat & sauté another 3 minutes.
4. Add broth & milk & bring to a boil. 
5. Add chicken, peas, thyme, salt & pepper & allow to simmer for 10 minutes.
6. Add egg noodles & simmer until cooked. Serve warm.

We are frequently told that eating a diet rich in quality protein, wholegrains and healthy fats is the sure fire way to limit numerous ills and live longer. On the flip side of this we also know that the cost of food also directly influences what we purchase and consume. A recent study in the US looked at the correlation between the cost of healthy foods vs unhealthy foods in individual neighbourhoods; with healthier foods costing nearly twice as much as unhealthy foods. This means that one's choice of purchasing healthier foods is strongly influenced by economic access and affordability. 
I post regularly giving advice on what to eat for health, which I realise as per the above isn’t always easy or accessible. With this in mind I wanted to share how I shop, using a few hacks to make sure that fridge and freezer is filled with the good stuff.
🐠 Wild frozen fish:
Buying frozen is often cheaper, fresher and easy to story to avoid anything going off!
🐟 Tinned fish:
Highly nutritious and so much cheaper than buying fresh, great for adding to pastas, on toast or a salad.
🍇 Frozen fruit and veg:
The stigma around these staples needs to stop. Again, fresher and a great way to avoid waste.
🥜 Buy in bulk:
Things like nuts, pasta and rice are great staples to buy in bulk. The initial cost may seem high but the cost per g/lb is normally much cheaper.
🥫 Staples:
Chickpeas, beans, tinned tomatoes, lentils - half your meat consumption by adding these fibre rich healthy additions to your meals. 💻 Online shopping benefits:
Ever walk around the supermarket and add things to the basket you didn’t actually go in for?! Doing an online shop is a great way to help you plan meals ahead of time, take advantage of deals and only buy what you need.
