Cheesy Cauliflower Mushroom Steaks 🤤😍😋 { YUM. YUM. YUM.  All the flavors and tastiness of cheesesteak, without the bread! 
Such an indulgent treat...that I wouldn't mind eating EVERY weekend!
One of the BEST things I've tasted in a while.

makes about 5 servings

Ingredients:
1 large cauliflower head, sliced to 3/4 inch thick as shown 
ghee or avocado oil cooking spray
1 Tbsp avocado oil, or olive oil 
1 Tbsp dry Italian seasonings 
8 oz fresh button mushrooms, sliced
2 fresh garlic cloves, minced
1 cup shredded mozzarella cheese
sea salt and fresh ground black pepper, to taste
fresh thyme to garnish

Instructions:
Preheat your oven to 400 degrees f.
Spray baking sheets with cooking oil.
Place the cauliflower slices onto a large baking sheet. They need lots of space between them, and shouldn't overlap so use 2 large baking sheets if needed.

Brush each side of the cauliflower steaks lightly with the avocado oil, and season with sea salt, pepper, and Italian seasonings.

Roast for 20-25 minutes in your preheated oven, until nice and golden brown on the sides, flipping once during roasting time.

In a mixing bowl add mushrooms, minced garlic, a pinch of sea salt and pepper, then toss to coat well.

Spread mushroom mixture on another baking sheet sprayed with oil, and bake for 10-15 minutes in the preheated oven.

Once done, remove the pans from the oven. Sprinkle roasted cauliflower steaks with cheese and top the cheese with roasted mushrooms & garlic mixture.

Return to the oven for 2-3 minutes until cheese is melted and bubbly.

Sprinkle with fresh thyme and enjoy! ❤Rachel

A soft boiled egg makes the best sauce for a bowl full of veggies. It really took this bowl of zucchini noodles with roasted chili sweet potatoes and steamed spinach to the next level. To make the perfect soft boiled egg 🥚 bring a pot of water to a full boil. Gently add the eggs with a slotted spoon and cook for exactly 7 minutes. Immediately remove the eggs from the hot water and place into a bow of ice water to stop the cooking. Let the eggs sit in the ice water for 5 minutes before peeling. .

Took a while and used almost 3 pounds of chicken to make and it’s pretty awesome. 🌟 Cajun Chicken with Coriander and Lime Rice 🌟

One of the recipes I plan to try this week, mainly because it doesn’t take long to make.. only 30 minutes! I do not feel like being chained in the kitchen all day. I’m lazy just like the next person. 😁

Ingredients: * 150 g dried long grain rice
* 1.5 tbsp Cajun seasoning
* 2 skinless chicken breasts
* 1.5 tbsp olive oil
* ½ red bell pepper deseeded and sliced
* ½ yellow bell pepper deseeded and sliced
* ½ green bell pepper deseeded and sliced
* 1 small brown onion peeled and sliced
* 1 small bunch coriander (cilantro), roughly torn
* Zest of 1 lime
* 1 avocado peeled, de-stoned and chopped ➖ ➖ ➖ ➖ ➖

{BATCH COOKING}  Hello hello ! Nouvelle session de #batchcooking ! Au programme : ✓Riz aux épices raisins secs et noix de cajou - ça m'a l'air un peu sec, je ferai une sauce yaourt citron pour l'accompagner ✓Blanc de dinde au curry rouge. Je ferai la semoule  le jour J.
✓Gratin de pâtes, potiron, gorgonzola
✓Quiche carottes saumon fumé estragon
Tout ça m'a pris 1h15 (vaisselle comprise)
Mais il me restait du potiron et des carottes alors j'ai fait une soupe (qui ira au congélateur)
Sans oublier le goûter :
✓un gâteau au yaourt à la framboise et aux amandes

Au final une session de batchcooking de 2h. Les repas sont prêts pour les dîners de lundi à jeudi  pour nous 3 + les déjeuners de Mister et moi-même. .

{BATCH COOKING} Hello hello ! Nouvelle session de #batchcooking ! Au programme : ✓Riz aux épices raisins secs et noix de cajou - ça m'a l'air un peu sec, je ferai une sauce yaourt citron pour l'accompagner ✓Blanc de dinde au curry rouge. Je ferai la semoule le jour J.
✓Gratin de pâtes, potiron, gorgonzola
✓Quiche carottes saumon fumé estragon
Tout ça m'a pris 1h15 (vaisselle comprise)
Mais il me restait du potiron et des carottes alors j'ai fait une soupe (qui ira au congélateur)
Sans oublier le goûter :
✓un gâteau au yaourt à la framboise et aux amandes

Au final une session de batchcooking de 2h. Les repas sont prêts pour les dîners de lundi à jeudi pour nous 3 + les déjeuners de Mister et moi-même. .

La espina es de gran ayuda guardarlas lavadas y secas  en un bols y tenemos la base de varias  ensalada o para licuados rellenos de tarta, tortillas u omelette mil opciones para usarla 👌👏👏👏 La organización es la clave  tenen comida lista para consumir en la heladera te llevará a no tener que llamar algún glovo o pedidos ya cuando tenemos hambre jaja o a ir a comprar comida no nutritiva y con mucho contenido de grasas, azúcares y sal 🤦

I am going into week 2 of my 4 week meal plan (we ate out twice though oops 😬) I normally take my planned breakfast and prep into muffins for the week but today I made it into waffles and omg so good. I need to get some Walden farms syrup to do it again.

Ja essen ist lebenswichtig und notwendig, was ist allerdings richtig und was ist falsch? ⠀

Was wichtig ist, ist das richtige Verhältnis. Gerade bei meiner letzten Schulung habe ich gelernt dass 50% aller Schweizer zu viel Fett auf den Rippen haben und das kommt wohl nicht von der ausgewogenen Ernährung. ⠀

Das Verhältnis von den einzellnen Komponenten einer Mahlzeit muss stimmen, aber wie ist das ganze aufzugleisen. Im wesentlichen ist es ganz einfach, dazu braucht es:⠀

30% Proteine ⠀
40% Kohlenhydrate⠀
30% Fett ⠀
⠀
Allerdings sollten die Proteine zu 2/3 planzenbasiert, die Kohlenhydrate komplex und das Fett hochwertig aus ungesättigten Fettsäuren bestehen. ⠀

Also ist es doch nicht ganz einfach 😥. Who else is meal prepping today? I just prepped these breakfast sandwiches that my husband is loving here lately. Next up are Peanut butter choc chip energy balls, teriyaki chicken with rice and veggies for lunches, and all the roasted beets for salads! Here's how to make the breakfast sandwiches.

Recipe makes 6(I usually like to double and put half in freezer)
•Preheat oven to 350, line a 8x8 baking dish with parchment paper. Mix together 6 eggs, a handful of finely chopped spinach, 1 diced shallot, pink salt & pepper to taste.
•Pour egg mixture into lined pan. Baked for roughly 15 minutes, or until eggs are firm.
•Let cool completely before assembling sandwiches.
•Add your choice of meat & cheese: I am using @applegate sugar free bacon today, I also love Applegate ham slices or their chicken sausage patties. Using colby jack cheese slices. I recommend a clean english muffin such as Ezekiel sprouted grains or Dave's Killer Bread.
•To reheat simply place into warm oven(350) for 5 minutes. I never recommend using the microwave as it kills most of the nutrtients!
•These will last 3 days fresh in the fridge(I store mine in the drawer where it's really cold) or pop them all into freezer and defrost overnight in fridge one by one.

I decided to do a manual change to my #carbconscious Bite points.  Since My calories are around 900-1000 when I hit 26 Bites, I find myself so hungry still....this is with a generous helping of zero foods.  I always end up eating about 4-6 Bites over.  So for a few weeks, I’m changing my Bites to 30 and lowering my weeklies.  Just makes more sense to me.

I decided to do a manual change to my #carbconscious Bite points. Since My calories are around 900-1000 when I hit 26 Bites, I find myself so hungry still....this is with a generous helping of zero foods. I always end up eating about 4-6 Bites over. So for a few weeks, I’m changing my Bites to 30 and lowering my weeklies. Just makes more sense to me.

Day 14; I’m down a total of 8.3lbs and I’m finally noticing small changes in my body. I know it’s not perfect, but it’s coming along! Plus havnt felt this good in years.

Keep it simple and colorful! ✨ I love having some leftover veggies on the hand and just throw them together with 🥑, rice or quinoa, especially when I'm in a hurry. Since I started university I hadn't had that much time (studying is killing me! 🙈), but that's why meal prep and good organization are important. 😃 Today, I cooked whole-grain basmati rice, sliced some fresh cherry tomato, cucumber and of course 1 small avocado. 😍
