Dinner last night was so damn good 🤤🤤🤤 Remember my air fryer low carb meatloaf?! Have YOU made it yet?! If not, you NEED to!
This time I wanted to double the batch (2 lbs of meat) so I did muffins in the oven instead of the air fryer loaf. Same recipe, cooked a little differently, still delicious.
This time my side dish was Green Giant mashed cauliflower (bacon & cheddar variety, in the frozen section).
•
RECIPE FOR MEATLOAF (I doubled this time, but this is the basic recipe):
1 lb 85/15 ground beef (I used 90/10 this time & like the fattier one better)
1 egg
2 Tbsp heavy cream
1/4 c. onion (grated or chopped SUPER tiny)
2 Tbsp low sugar BBQ sauce (I used @alternasweets plus a splash of Worcestershire sauce)
2/3 cup crushed pork rinds (always @porkkinggood)
1/3 cup grated Parmesan cheese (the powder kind)
1 tsp parsley
1/2 tsp pink salt
1/2 tsp garlic powder
1/4 tsp ground black pepper

RECIPE FOR THE GLAZE:
1/4 cup @alternasweets ketchup (or other reduced sugar ketchup)
2 Tbsp Sukrin gold brown sugar substitute
1 Tbsp red wine vinegar
•
Combine all ingredients for the meatloaf in a bowl & mix REALLY WELL (if you don’t mix it enough it will be too moist/crumbly & not hold together).
In a SEPARATE bowl, mix all ingredients for the glaze.
Scoop meat mixture into greased muffin tin, top each with some glaze. Cook at 350° for 15-20 mins depending on their size.

This recipe was originally based on a recipe from @the_wholesome_dish, which I thought looked good- then I adapted several things to make it low carb, and made it in the air fryer instead of the oven. But tonight did the oven muffins instead. SO FLEXIBLE!
Also, the glaze? SO MUCH BETTER than just regular ketchup! I’ll never use regular ketchup on meatloaf again.

Going with my favorite kinda meal today. I spiced the shrimp up with a mix of fennel, smoked paprika, red chili flakes, garlic, and sea salt. So simple yet so good.... the fennel adds such a great flavor profile. I served it on top a big base of spring mix and served with some cucumber ribbons, 1/2 avocado, micogreens, cherry tomatos,and fresh jalapeño for some heat.

Taco Bowl kinda night 💪🏼💪🏼💪🏼.

I’ve been back on track with my eating for a full week. It’s amazing how calories of “healthy things” add up.  I’ve always been diligent about workouts, but food is always my challenge. Not bad stuff, I just love good food and I tend to graze throughout the day, especially while cooking! 😂😂 So I decided to do a 30 day challenge with myself where I log my food so I stay a little more mindful of what I consume. Last Tuesday I started measuring my food and logging it into MyFitnessPal before sitting down for a snack/meal. Everyone’s different, but for me taking inventory of what I’m eating is really helpful in stopping mindless or anxious grazing. Let me know if you have any ideas on what’s worked for you.

Here’s how I made this guy. A great way to get a ton of veggies in and feel satiated:
.
1.In a medium pan, added 1/2 tablespoon avocado oil and 5oz local ground meat seasoned with sea salt. Then stir and break up the meat until completed separated with a wooden spatula. As its going, add taco seasoning to your liking (make sure to check ingredients on your taco seasoning, they can get pretty rough). Cook to desired temperature.
.
2.While that was going, I started with a big base of shredded lettuce. Super filling. I add some salsa spoons at the bottom as well.
.
3.To the base I added some sliced cucumbers, some red onion, jalapeno, a tablespoon of sour cream, a dash of coconut sriracha, and of course some cheddar. As I always say… you can use whatever you like and have on hand. But I was feeling this combo today. .
.
4.Added the ground meat to the bowl & squeezed some lime over.
.
Hits the spot, every time!

I’ll answer that for you - NOTHING😍😋 Spent my day off (on Monday) creating the ultimate brunch for my cousin and his wife since they just had a baby👶🏼 Whipped up some paleo pancakes with lots of fruit + butter + syrup 🥞 and then toasted lots of sourdough to top with avocado + spinach + smoked salmon 🍞 Hardcore craving all of this again right now☝🏻 Hope you all have a HAPPY WEDNESDAY!

🍫CHOCOLATE MOUSSE🍫
A super decadent and filling keto dessert, for when your chocolate cravings hit hard! 
Though you should be aware to keep your portion small, since it’s quite up there in calories and fat!

▫️Canned Coconut Milk: leave one closed can in the fridge overnight. The coconut milk will separate into a solid upper part (that’s what we want) and coconut water in the bottom part.
▫️Erythritol: 3-4 tbs (to taste)
▫️Heavy cream: 2-3 tbs
💫Whisk the solid coconut milk part with the sweetener and the heavy cream until you get a nice whipped cream
▫️Cacao Powder: 2-3 tbs 💫Mix it into your whipped cream. You can also add a dash of salt at this stage to make the flavors pop out more!
💫(optional) garnish with some no added sugar chocolate shavings👍

Ένα απολαυστικότατο γλυκό για όταν η όρεξη για σοκολάτα δεν παλεύεται!
Απλά προσέξτε την ποσότητα που θα φάτε, καθώς παρότι κέτο, έχει υψηλές θερμίδες και λιπαρά! .
▫️Γάλα καρύδας σε τσίγκινο: το βάζετε στο ψυγείο και αυτό διαχωρίζει σε στερεό μέρος που μένει πάνω και σε νερό που μένει στο κάτω μέρος. Εμάς μας ενδιαφέρει το πάνω στερεό μέρος. Το νερό το πετάμε.
▫️Ερυθριτόλη: 3-4 κ.σ. ▫️Κρέμα Γάλακτος: 2-3 κ.σ
💫Χτυπάμε στο μίξερ το στερεό γάλα καρύδας με την ερυθριτόλη και την κρέμα γάλακτος μέχρι να γίνει σαν σαντυγί.
▫️Κακάο σοκολάτας: 2-3 κ.σ.
💫Προσθέτουμε το κακάο στην σαντυγί μας. Εδώ βάζουμε και λίγο αλάτι αν θέλουμε για να αναδειχθεί καλύτερα η γεύση.
💫Γαρνίρουμε αν θέλουμε με ξύσμα κουβερτούρας χωρίς ζάχαρη!

▫️Ερυθριτόλη: 3-4 κ.σ. ▫️Κρέμα Γάλακτος: 2-3 κ.σ
💫Χτυπάμε στο μίξερ το στερεό γάλα καρύδας με την ερυθριτόλη και την κρέμα γάλακτος μέχρι να γίνει σαν σαντυγί.
▫️Κακάο σοκολάτας: 2-3 κ.σ.
💫Προσθέτουμε το κακάο στην σαντυγί μας. Εδώ βάζουμε και λίγο αλάτι αν θέλουμε για να αναδειχθεί καλύτερα η γεύση.
💫Γαρνίρουμε αν θέλουμε με ξύσμα κουβερτούρας χωρίς ζάχαρη!

•1 egg
•1 tablespoon of butter or oil
•1/2 tsp baking powder
•dash of salt
-mix together and microwave for 90 seconds🥳

I’ve made french toast for Nati with this bread. Just make the bread recipe, cut in half and let cool for a bit.

Beat and egg with a teaspoon of vanilla and cinnamon.

Dip one slice of bread in the egg and cook on a pan with a little butter. Let cook until golden brown.

Hit a new best @165 for my back squat. Back squat is not a priority for me, but I still practice it! Back when I went to CrossFit the heaviest I ever got was 155.  I never tried to max out after that. Eggplant, green pepper, red onion and shrimp with fresh garlic and fresh ginger, soy sauce, broth and red pepper flakes served over steamed cauli rice. I love this kind of food and I kept it low carb. My belly is full and smiling!
