I honestly don’t really believe it either 😅 but... yup. That’s me in both photos.⠀
⠀
Positive changes I made from then to now:⠀
1. Eliminated carbohydrates, gluten, sugars, sugar substitutes, coffee & all caffeine, and more recently almost all plant foods from my diet. I eat meat, seafood, butter, salt, some dark chocolate and some fresh herbs.  As always, I’ve tagged some great resources r.e. nutrition. ⠀

2. Prioritized sleep and mental health. This is easier said than done and took me many years to accomplish. ⠀
⠀
3. Stopped washing and dyeing my hair, learned how to care for #biracialhair properly, got smarter about heat styling.⠀
⠀
4. Stopped waxing my damn eyebrows 😂 I just tweeze them now. Also learned how to do my makeup to flatter my features. (Ladies, WHY did we think black eyeliner was cute?!)⠀

5. Started exercising, though these days I don’t do it nearly as intensely as I used to. My body needed a break.⠀
⠀
6. Started prioritizing going outside in nature and being in the sun whenever I can (but always using SPF!!! Alwaysssss.)⠀
⠀
7. Learned to listen to my body and honor its signals. Again, much easier said than done. ⠀
⠀
8. Research. So much research. That’s how I learned all of the above.⠀
⠀
I go back and forth a lot when it comes to posting before and after/transformation photos, because I don’t like the idea of obsessing over age/the past/who I used to be... but for the purpose of Instagram, I think they’re the most effective representation of my journey. My goal is to show people that these changes are completely attainable, and you don’t need to buy products or get surgery to look younger and be healthier. I know many of you follow me because of my health and weight loss journey, so I’ve been digging back through old Facebook photos to find some real gems to share with you 😆 enjoy! ⠀

Air fried jalapeño poppers: .⠀
💥4 Oz softened cream cheese⠀
💥1/4 cup shredded cheddar⠀
💥5 jalapeños .⠀
💥1/4 tsp garlic salt⠀
💥1/4 tsp onion powder .⠀
💥1 tbs freeze dried chives or fresh .⠀
💥5 slices of bacon .⠀

🔥Start by cutting the jalapeños in half lengthwise and be sure to remove the seeds and the ribs of the pepper or else it will be very spicy. You can easily do this with a small spoon.⠀
🔥In a small bowl mix the softened cream cheese, shredded cheddar, onion powder, garlic salt and chives until well combined.⠀
🔥Fill each half of the jalapeño with the cream cheese mixture making sure not to over fill it.⠀
🔥cut each slice of bacon in half and wrap around the pepper securing it tightly with a toothpick to make sure your bacon stays in place. .⠀
💥Air fry 400° for 12-14 min or until bacon is at desired crispness and enjoy . (All air fryers vary and bacon thickness so just check on them occasionally because time will vary).⠀

In my story today I’m taking about 3 things that trigger us to emotionally eat, overeat, have insatiable cravings and difficult mentalities around food. The solution may be a lot more simple than you think! Sometimes it just takes some reassessing of the basics and a wake up call to check your habits around nutrition. Serves 4 in 25 mins⁠
⁠
Ingredients-⁠
⁠
New York Steak⁠
4 New York Steak strip steaks(Porterhouse steaks)⁠
Salt and pepper to season⁠
1-2 tablespoons olive oil⁠
.⁠
Creamy Garlic Shrimp⁠
3 tablespoons unsalted butter, divided⁠
8 ounces (250 g) shrimp deveined, tails on or off⁠
4 cloves garlic (or 1 tablespoons minced garlic)⁠
1/4 cup dry white wine or low-sodium chicken broth⁠
3/4 cup heavy cream* (thickened cream)⁠
1/4 cup fresh shredded parmesan cheese⁠
Salt and pepper to taste⁠
1 tablespoon fresh parsley chopped⁠
.⁠
.⁠
Instructions-⁠
.⁠
Pat steaks dry with paper towel. Season with salt and pepper.⁠
Heat a large cast iron skillet or grill over medium-high heat. Sear/grill steaks for 4-5 minutes each side until browned and cooked to desired doneness.⁠
Transfer steaks to a warm plate; set aside.⁠
Melt 2 tablespoons butter in the skillet (if using a skillet). Add shrimp to the skillet, season with salt and pepper and sear until just cooked and pink -- about 2 minutes. Transfer to a bowl; set aside.⁠
(For grill: grill seasoned shrimp while brushing with melted butter until done.) To the same skillet, add the remaining butter, add the garlic, sauté until fragrant (about one minute). Pour in the white wine (or broth), and allow to reduce to half, while scraping any bits off of the bottom of the pan.⁠
Reduce heat to low-medium heat, add the cream and bring to a simmer, while stirring occasionally. Add in the parmesan cheese; allow to melt through the simmering sauce. Season with salt and pepper to your taste.⁠
Add the shrimp back into the pan; sprinkle with the parsley, and stir through.⁠
Serve with steaks.⁠

Ingredients:
1 Chicken leg quarter
1 Tbsp Butter
1 Tbsp minced Shallots
1.5 cups Chicken Stock
2 Tbsp Heavy Cream
1 cup fresh Spinach
Salt and Pepper, to taste

Procedure:
1) Melt butter in a pan then sprinkle shallots.
2) Add chicken on top of the shallots. Season with salt and pepper.
3) Add enough stock to barely cover the chicken. Bring to a simmer.
4) Cover and poach over low heat for 20-25 minutes.
5) Take chicken out of the pan and set aside.
6) Reduce pan juices to approximately a quarter of a cup.
7) Add spinach and heavy cream. Simmer over low heat until sauce is slightly thick.
8) Return chicken into the pan.
9) Serve hot. ➡️ Nutritional Information:

Day 15: Happy Memorial Day! I got up early and decided to take a nice long walk and listen to my @michelleobama audiobook. It’s time to start training for a marathon/long distance walking even. So excited! Although, I haven’t decided which I want to participate in yet.⁣
⁣
My initial thought was to do the #Komen3Day in September in Boston since I did the #Avon39 (trained and competed FULLY keto I might add 😁) a few years ago. But with COVID, I may need to set my sights on an event later in the year like November or December.⁣

So, here’s day 1...again. I’d started and stopped this training all year. But now that I have a great @audible book and some new @brooksrunning shoes, I’m ready to GO! ⁣

Now to figure out...why are my active calories on my Apple Watch (514) so low compared to my burned calories on @endomondo (927). Does anyone know?⁣

Today is #metabolicmonday and that means fasting all day. 
I’m very thankful for @metabolic_mike and all his incredibly informative videos and posts on the importance of fasting. It’s been eye opening in the best ways!
Yesterday I was testing out some food theories I have on myself and had more of a carnivoreish day. I had some nuts with a sugar free brownie and some mango. Thankfully this didn’t seem to cause too much inflammation but enough that I got a bit of a headache and woke up with stiffer fingers. 
Today my body gets a break to heal.

Ich habe irgendwann davon gelesen denn das Thema INTERVALLFASTEN ist ja momentan in aller Munde.

Ich merkte, das ich seit ca. 5Jahren als ich begann meine Ernährung umzustellen, schon ganz intuitiv 14 Stunden Pause zwischen Abendessen und Frühstück ließ weil ich merkte das ich durch spätes Abendessen schlechter Schlafen konnte und auch am Morgen viel besser gelaunt und mit mehr Energie in den Tag starten konnte, wenn ich die letzte Mahlzeit gegen 17-18 Uhr zu mir nahm! .

Also fehlten nur noch 2 Stunden für die 16/8 also 16 Stunden Pause und ein Zeitfenster von 8 Stunden zum Essen ! 
Ich las Studien in denen gesagt wurde die Körperliche „Müllabfuhr„ erst nach 14 Stunden Pause anfängt zu arbeiten und anfängt unbrauchbare Teile zu entsorgen und brauchbares zu recyceln.

Seit dem versuche ich an Tagen an denen es mir gut geht , ich nicht viel vorhabe und wenn ich mich danach fühle diese 2 Stunden mehr Pause einzubauen.
.
.
Fazit  12-14 Stunden absolut machbar und schon spürbare Effekte  16 Stunden gar nicht so einfach aber mit wenig Druck und nur wenn man sich danach fühlt , merke ich ganz deutliche Veränderungen und ich spüre wieder viel mehr mein Hungergefühl und esse nicht mehr nur weil die Uhr sagt Frühstücken sonder weil mein Bauch es sagt !

I had a very important conversation with my mother today about diet culture, eating disorders, body image/body dysmorphia, and the fat phobia/shaming that constantly surrounds us. Don’t get me wrong, I love being low carb and the low carb community, and while I love seeing people lose weight for the better, it has made me realize just how very fat phobic society is. .

I’m not one to speak. I come from a pretty privileged position wherein I’m naturally pretty thin and my mother made sure my family ate healthy foods. She knew almost innately, despite growing up in Vietnam and consuming deep fried foods and starches almost daily, that a diet based primarily on fresh produce and fresh dairy/meats were healthiest. I went a lot of my life innately knowing what was not healthy as well because of her. However, as diets and diet culture continue to grow, eating disorders are on the rise, from anorexia to orthorexia to binge eating disorder. And I want everyone to know that I often say I am keto or paleo, but I don’t like labels, and I never have. I’m just eating the way that makes me feel best. And I, just like everyone else, have bad body image days. Sometimes weeks. It’s a work in progress but I’m slowly loving myself more and more. Recently, I’m the best mentally & physically I’ve been in years!

I find that amongst people/groups of people following any diet, you’ll have the very restrictive ones. And while I support eating what makes you feel good, I DO NOT support policing ones eating habits. Saying that someone should not be eating x, should be counting total carbs instead of net carbs, should ONLY eat y, and “should” or “shouldn’t” be doing something on any diet is absurd. Policing people’s/your own eating habits only sets one up for a binge and disappointment due to the restrictions one set upon themselves. I thrive on lower carb by eating lots of veggies and produce. Am I fully keto? No. Am I fully paleo? No. But I eat like me, and I feel great, and I love my body. Love and feed yours what it needs, and don’t feel the need to restrict foods bc those online say so 💓

I’ve always thought I became overweight because of my lifestyle. Although it was always strange.. I always danced five times a week. My food intake was normal. I was never overweight as a child. But still was blaming myself. When I saw old friends/classmates (from my teenage years when I was skinny), they always said something about me gaining weight. I became insecure, didn’t want to show myself outside anymore. 
I took a personal trainer and a nutritionist. The results weren’t good enough. They look at you as if you are lying but you know you aren’t! I was always searching for a better diet, but no diet gave me the results I wanted. 
Years later, my hair starts falling out, so I went to the doctor. I also have adult acne. She thinks that it could have something to do with the thyriod. Two weeks later I have an appointment with the endocrinologist. It soon became clear that I have an issue with my hormones. As part of the examination I also have to weigh myself, measure myself. And then it hits me, because I can’t lose weight that easily, I stopped caring about myself. I didn’t try to eat healthy anymore..I didn’t work out anymore (besides dancing)..I also only slept around 4 hours a day. There is no excuse for not taking care of yourself. So today I am starting my journey to a HEALTHIER body. I always hoped for a slimmer body, but I have to have faith in my doctor that after the medical process, that will also happen. But for now I have to do what I CAN do and that’s taking care of myself.
