my childhood consisted of packets upon packets of top ramen covered in mounds of melted cheese. well those times have come to an end, and it wasn’t till about a few years ago where I had real ramen. my mouth was bursting with flavor and I knew I needed to make my own someday...so finally the time has come 🙆🏽‍♀️ this *coconut lemongrass ramen* is so rich and flavorful with coconut milk, lemongrass, and kaffir lime.

𝙙𝙞𝙣𝙣𝙚𝙧: tofu, sweet potato, veggies, and I ate it with cashew cheese -
I LOVE super quick simple meals like this! I usually just press and cut up the tofu ahead of time so all I have to do is cook it on the stove for about 5 minutes until it’s crispy. It’s super simple to pair with sweet potatoes that I just cut up and microwave for about 2 1/2 minutes on each side. This meal took literally 10 minutes and was super yummy!

I’d be lying to you if I said seeing my body change hasn’t been a complete mind boggling experience, and let’s be honest here.. it’s ONLY the beginning! .

For a year or so now, I’ve been keeping it on the tighter and lean side. Mainly because I truly enjoy my clean eating, intense workouts, HIIT cardio and so does my body but nows the time where I have open arms into new experiences of “my body.” .

We also live in a society where we are often (not always) conditioned to believe smaller is better, but always remember whether it’s for a baby or your health, weight gain can be necessary and you should never be ashamed of it!

Gyms are and have been closed, my level of intensity has really went down and these hormones are a wild thing. I feel more fatigued and tired most days. I’d be lying if I said sometimes I just cry and don’t even know why?Truly, not sure the last time I had a straight 7 hours of sleep? I’m tossing and turning most nights now, my back pain has increased. I’m 4.2 months into pregnancy, with little over 5 months to go.

But you know what? IM READY for whatever this pregnancy tosses at me, everyday wont be awesome, but when is everyday absolutely awesome “non-pregnancy?” I stick to my healthy foods I love, I started walking 2x a day, and shoot for 4 workouts a week now. It might not be my usual intense self but it’s my new routine and life I’m creating around the obstacles I have. I’m adjusting and taking it all in with an open mind and that’s all anyone can do. .

HOT CROSS PORRIDGE. Every Easter I rustle up a bowl of porridge that incorporates the flavours of a hot cross bun, which work beautifully with the oats 😍. Definitely give this a try if you're a hot cross bun fan!

Recipe (serves 1):
🐰 Gently heat 40g oats in a saucepan with 125ml each of milk & water, 1 tsp apricot jam (or swap for honey/sugar/sweetener) and a handful of raisins. Stir until thickened.
🐰 Top with 1/4 tsp each of ground cinnamon & mixed spice. To get the hot cross bun pattern, I made a stencil out of some kitchen foil (as you do 😋) which I placed in a cross on top of the porridge, then dusted the cinnamon & mixed spice over the top before carefully removing.
🐰 Serve and enjoy!

Made these easy mini pizzas for lunch today which are always a hit!  Just top whole wheat English muffins with pizza sauce and your favorite toppings!  Bake at 350 for 5-8 minutes until the cheese is melted and the muffin is toasty. 😋. Mom hack: I cut up baby spinach pretty small and add it after the sauce but under the cheese.  Kids don’t even notice it’s there 😉

Slow cooked the rotisserie chicken, made Italian rice, and cooked my cabbage. Also made guacamole with the cilantro and parsley I cooked. Everybody in this house is full of food and love 💕

Hope you are all doing well and keeping safe and healthy! What have you all be doing to pass time? I’ve been continuing my home workouts and practicing my handstands! I am however really missing the gym, the environment there and the normality of life but oh well!

The others day I baked these bad boys ^^^ and they were delicious and guess what only 3 ingredients!!! All of which you probably own! 
Tag me if you re-create them!💗

Recipe:
-1 banana (I used 80g banana)
-2 eggs
- scoop of protein powder (I used @bulkpowders why isolate salted caramel😛)
-optional add ins (cinnamon, fruit, nuts, chocolate etc!

Mash the banana
Mix all the ingredients in a bowl
Transfer to a cupcake tray and bake at 180c for 20-25 mins! 
Eat them as they are are or top with your favourite toppings (I topped mine with @fage 0% yogurt, @meridianfoods smooth almond butter, berries and @bulkpowders sugar free syrup 🤤)

When it’s the day before grocery day and your #quarantinekitchen is looking a bit sparse, you find your inspiration within the depths of the cabinet.  Tonight’s dinner didn’t consist of much colour variation but packed a lot of punch in its deliciousness!

Chilaquiles en salsa verde😋
Para 2 / 3 personas
Ingredientes • 6 tortillas
• 4 tomates verdes
• 1/3 cebolla
• 1 diente de ajo
• 2 chiles serranos (pueden ser más si gustas)
• Agua
• Sal
• Cilantro

Procedimiento
1. Cortar y freir las torillas 
2. Cocer el tomate verde, la cebolla, un diente de ajo y chiles serranos al gusto con un poco de agua y sal.
3. Cuando agarre un poco de color el tomate, licuar con un poco de cilantro fresco.
4. En una olla, acitronar cebolla en rodajas y agregar la salsa previamente licuada (se puede agregar unas hojitas de epazote).
5. Sumergir los totopos en la salsa con un cucharon y servir. 
6. Servir con frijoles, crema, queso, cebolla (huevo opcional).

there’s nothing like a huge, delicious salad to make a monday at home a liittle bit better. this combo has been one of our favorites for a while, but you can add any greens/veggies you have. the dressing is a take on a healthified caesar & it goes perfectly with the spicy roasted chickpeas. you can use our spice mix or use any spices you’d like (even just salt and pepper). for the base we used kale, arugula, green onion, fresh fennel, cucumbers, avocado, and feta. keep it vegetarian or add your choice of protein for a little more substance! you can also make this vegan by leaving out the feta and skipping the greek yogurt in the dressing. enjoy!!

LEMON TAHINI “CAESAR”
- 1/4c olive oil
- 2T Dijon
- 2T tahini
- 1T plain Greek yogurt - 2t Worcestershire - juice of 1.5 lemons - salt & pepper
- chopped fresh herbs (optional)
ROASTED CHICKPEAS
- 1t chili powder
- 1t paprika
- 1/4t cayenne
- 1/2t garlic powder - salt & pepper
- 14 oz can chickpeas
preheat oven to 400. rinse chickpeas in a colander until all the suds are gone; then shake & pat dry with a towel. spread the chickpeas out on a baking sheet and bake “dry” for 15 minutes (this gives them the crunch). make the spice mix during this time. once the 15 minutes is up, remove from the oven and drizzle about 1T olive oil, making sure the chickpeas are lightly coated. bake another 10-15 minutes, or until golden brown. remove the tray and sprinkle the spice mixture on top of the chickpeas, rolling them around to get an even coating.

Leah said to me the ice tea is like a weight mommy look I’m strong like you! 
Than follow up with I need a salad that was hard I need to eat healthy! 
My heart skip a beat. They know that working out is a huge part of my life they know mommy will be eating healthy! Most importantly they are watching every move and learning! •
