30 Min Pesto Penne w/ Chicken n Cherry Tomatoes 😍🍗🍅

Ingredients 🍱: 1 tablespoon salt⠀
16 ounces penne pasta⠀
16 ounces French cut frozen green beans, unthawed⠀
2 chicken breasts, sliced thin⠀
3/4 teaspoon Lawry's seasoned salt⠀
1/2 teaspoon steak seasoning⠀
olive oil⠀
3/4 cup mayonaisse⠀
1/4 cup pesto⠀
1 and 1/2 tablespoons white vinegar⠀
1/2 teaspoon salt⠀
1/4 teaspoon pepper⠀
1 box cherry tomatoes, sliced in half⠀
1/4 cup Parmesan, shredded⠀
more Parmesan, for garnish

DIRECTIONS 👩‍🍳:⠀
Bring a large pot of water to boil, adding about a tablespoon of salt. When the water is boiling, add the penne and set a timer for 5 minutes.⠀
After 5 minutes, add the frozen green beans. You don't have to use the whole bag, it's up to you. Set another timer for 4 minutes. When it is done, drain completely and return to the pot. If it's going to be a while before you add the sauce, stir in a couple teaspoons of oil.⠀
Meanwhile, prepare the chicken. Slice each breast into thin strips, pat dry, and season with Lawry's. Heat a skillet over medium high heat. Add oil to coat the pan, 1-2 teaspoons. When the oil shimmers, add a few of the chicken strips. Make sure there is space in between. We want them to brown, not steam. After 2 minutes flip the chicken over and cook for one more minute or until browned. Continue until all the chicken is cooked. Set aside on a cutting board and let rest. Once it has cooled a bit, chop into bite-size strips.⠀
In a small bowl combine the mayonnaise, pesto, vinegar, salt, and pepper. Slice the tomatoes and shred the Parmesan. When the pasta is drained, add the sauce, tomatoes, Parmesan, and chopped chicken. Stir it up. Serve hot

Almost time for winter break!🤗 On Friday I head back to Canada for almost a month! This lunch was a win after all the delays and my glucose test leaving me feeling poorly as it took just five minutes to prep and is full of healthy fats - something that is great for refuelling your body when your immune system is running a little low.😓

INGREDIENTI per circa 8 muffin:
• • 225 g di Farina Tipo 1 • 250 ml di acqua tiepida • 20 g di Cacao amaro • 100 g di zucchero di canna • 50 ml di olio di semi • 1 bustina di lievito per dolci
• essenza di vaniglia q.b.
~~~~~~~~~~~~~~~~~~~~~~~~~~ PROCEDIMENTO:
Iniziate accendendo il forno in modalità ventilata a 180° C. Sciogliete lo zucchero di canna 
nell’acqua tiepida. Incorporate poi l’olio di semi e l'essenza di vaniglia. Setacciate la farina insieme al cacao e il lievito, 
e aggiungeteli poco alla volta ai liquidi, facendo attenzione a non creare grumi. Una volta 
ottenuto un composto liscio ed omogeneo, versatelo all’interno di stampini per muffin, 
riempendoli per 2/3 circa. Infornare e cuocere per 30-35 minuti. ~~~~~~~~~~~~~~~~~~~~~~~~~~

Things I used to think/believe: ❌Eating white carbs are worse for you than brown carbs. ❌Too much protein can make you fatter. ❌Breakfast is the most important meal of the day. ❌Sleep when we die. ❌Everyone needs to supplement BCAAS. ❌When massive people told me they didn’t take steroids I believed them. ❌If you eat clean you’ll get ripped. ❌HIIT is the best for burning fat. ❌6 meals a day is the best way to get your meals in. ❌Exercise burns fat. ❌Too many carbs are bad for you. ❌Some fruits have too much sugar. ❌Coconut oil is the best. ❌Training abs makes them more visible. ❌Beast mode was the best way to train. ❌Not eating enough causes someone to store fat. ❌No one filters their photos.

My point is... Until we learn, understand and educate ourself. We are all students and victims of the “FITNESS” consumer industries nonsense. 
All you will ever need to get in better shape: ✅ Controlled nutritional approach... Deficit for fat loss & surplus for tissue gain. ✅ Move more (create higher output) for fat loss & Overload muscles for tissue gain. ✅Take care of your mental health. Sleep, less social media and do things you live and enjoy.

Missing these super easy and decently healthy cheesecake bites. Found a recipe on #pintrest and altered it to my taste like removing the sugar because it’s unnecessary.

For the crust I food processed nuts and added it to melted ghee and some almond flour. Put some in small mason jars and packed them down then baked them at 350F while I got the filling ready. I think I only baked them for about 15min, but I went by the eyeball test.

The fillings are two different ones: raspberry and blackberry. Each was about 100 calories and made with low fat cream cheese, Greek yogurt, blended berries, and a touch of honey. Set in the fridge overnight and topped with a berry.

These were easy to freeze and thaw as well, so I made a ton! The slightly frozen ones were actually my favorite 😋
