PUMPKIN PIE SMOOTHIE BOWL giving me all the autumn feels πŸŽƒ I love getting creative in the kitchen with seasonal ingredients and I am excited to share this recipe with you all!

This smoothie packs 4 different veggies (that you can’t really taste!) and is sweetened with dates and banana. Recipe makes two 20 oz smoothies.

To make the PUMPKIN PIE SPICED SMOOTHIE, blend:
β€’ 1 frozen banana
β€’ 1/2 can organic pumpkin
β€’ 1 tbsp virgin coconut oil
β€’ 1/2 cup steamed then frozen sweet potato
β€’ 1/2 cup frozen butternut squash
β€’ 1/2 cup frozen cauliflower
β€’ 1 tbsp organic pumpkin pie spice
β€’ 1/4 cup almond butter
β€’ 1 tsp ceylon cinnamon
β€’ 1 tsp vanilla extract
β€’ 2 scoops @nuzest_usa vanilla plant-based protein powder
β€’ 1 1/2 cup @newbarnorganics almond milk (add more to thin)
β€’ 3 medjool dates soaked and pitted

Topped with @purely_elizabeth granola, coconut flakes, pomegranates seeds, @beekeepers_naturals bee pollen, & pumpkins seeds

Ingredients:
2 cups spinach 
1 cup fresh basil

Ingredients 🍱:
1 pound of stuffed tortellini, cooked & drained (use your fave)
2 tbsp of flour
1 1/2 cups of half & half
1/2 tsp of salt
1/2 tsp of roasted garlic powder
1/2 tsp of fresh ground black pepper
1/4 tsp of nutmeg
1 cup of parmesan cheese
4 ounces of room temperature cream cheese
1/2 cup of smoked gouda cheese
16 ounces of frozen spinach, thawed and drained
a pinch of red pepper flakes

DIRECTIONS πŸ‘©β€πŸ³:
In a saucepan, over medium heat, melt 3 tbsp butter. When the butter is melted, whisk in the flour and cook for about 90 seconds until the flour taste has cooked out. Then, add in the half and half and stir well to combine. It’s a good idea to make sure the heat is on high at this point and as soon as it starts to thicken, lower the heat back to medium. Add in all of the other ingredients except the tortellini and stir occasionally to combine well and to prevent from sticking. Once the sauce is thick, toss in the pasta and serve.

For the shrimp!
1 pound jumbo shrimp, cleaned
1 tbsp of Old Bay Seasoning
1/2 tsp of salt
1 1/2 tbsp of olive oil
Toss the shrimp together with the olive oil, salt, and Old Bay. Get a skillet hot and then sautΓ© the shrimp on both sides until they’re cooked through. Serve immediately.

Just 5 months ago we sat here together in this water.. actually I saw you sitting alone as the water rushed up and over your legs and I came to sit with you.. I wondered what you were thinking as you stared out at the ocean.. you were a deep thinker and I could tell you were appreciating every part of the experience.

But on my trip this week I sat alone in the same place as the water rushed over my legs and while I looked out over the ocean you came from heaven to sit with me.. You reminded me how important it is to really live... and really appreciate every part of every experience.. You reminded me that life is short 
and that REAL precious life is more than the silly BS we often worry way too much about.. You reminded me that I am here for a reason

and that the passion I have to help as many women as possible to never diet again is about helping them live more and enjoy more in their REAL lives.. Alysha, I miss you.. and as I head back from Florida today thinking about you and the time we spent together there.. I can’t thank you enough for reminding me that I can not give up.. Sometimes you gotta make a sauceless pasta so you can let all your ingredients stand out.....or in this case if you forgot to buy sauce....

Ingredients: 
1) 1 cup cremini mushrooms
2) 1 cup sliced peppers
3) 1/2 medium white onion
4) 1 tbsp minced Garlic
5) 1/4 box whole wheat spaghetti 
6) 500 grams of lean ground beef 
7) salt & pepper
8) 2 tsp olive oil
βž–βž–βž–βž–βž–
Started by getting a pot of water to boil while heating up a teaspoon of olive oil. Once the oil is hot I add the onion and garlic. Wait for the onions to become translucent and the aroma fill the room then I added the ground beef until fully cooked. I add the mushrooms and peppers then toss the spaghetti noodles in the boiling water. Once soft i rosa everything together. Add seasoning to taste.

Currently on my 3rd day off from the gym. Decided to take 8 days off from training. Activity is still fairly high, due to being a student... 12k steps minimum a day. Calories have of course dropped, due to less activity - which of course has decreased my appetite. So, my calories are currently 3200. I'm not really stressing about the calories. I still track them because, well... it's just ingrained in me.

Weight is currently 182.3lbs. Likewise, I'm not that bothered about my weight either. I just like to document everything, so I can look back and see what I was doing, and what was working etc.

Current lifting goals. Remember these are relative to my current strength. We are all unqine. I will be stronger than some and weaker than others. That's okay.

Current 1RM Lifts:
Bench 110kg
Squat 150kg
Deadlift 185kg
Shoulder press 85kg

1RM Lift Goals: 3-6 Months 
Bench 130kg
Squat 170kg
Deadlift 200kg
Shoulder press 100kg
