Honey Chipotle Chicken

1.25 lb. chicken breast tenderloins
3 Tbsp. Adobo sauce, from a can of chipotles in adobo
2 Tbsp. Olive oil
2 Tbsp. Honey, agave, or maple syrup
1 Tbsp. Dijon mustard
1 Tbsp. Honey mustard
2 Tbsp. Chopped cilantro
2 garlic cloves, minced
1/4 tsp. salt
1/4 tsp. black pepper 
Combine ingredients in a ziplock bag and let chicken marinate in refrigerator several hours. Heat a large non-stick skillet over medium heat and pour chicken and marinade into pan and cook until browned on both sides. 
Lime Quinoa
1 c. Water
1/2 c. Quinoa
1/4 tsp. salt
1/4 tsp. black pepper
1 tsp. coconut oil
Zest and juice from 1 lime
Bring water to boil and add all ingredients except lime zest and juice. Reduce to low and cook 20 min. Remove from heat and stir in lime zest and juice. 
Salad
Chopped romaine and spinach
Cucumber
Tomato
Green onion
Avocado
Cilantro Lime Dressing: 1 Tbsp. Olive oil, 1 Tbsp. Maple syrup, 1 Tbsp. White wine vinegar, juice from 1 lime, 2 Tbsp. Chopped cilantro, salt and pepper to taste.

Sadly those two are interconnected, when we feel insecure about how our body looks, we try to fix it by restricting food. At the end, regardless of what happens with your weight, your relationship with your body will not change and your relationship with food will get worse 😰

Before trying to change the way you look, remember that ONLY YOU make the rules of what looks and feels good on you! YOU decide what is aesthetically pleasing! Don’t let marketing, society, or anything convince you that you “need” to look a certain way 😌

I was convinced that I had to be very lean because I work in the fitness industry 🤯 the truth is that I wasn’t in my healthiest or in my happiest when I was in my leanest. I achieved what was my “goal body” and it still wasn’t enough, I didn’t even realized it until now🤯🤯🤯

Before working on changing how you look, work on feeling comfortable in your current body. I’m not saying that you have to love it, but at least work on being less focused on it. Once you feel good in your own skin, if you still want to, then work towards physique goals... but until then, I seriously recommend you to work towards a healthier relationship with food and yourself😉

If I’m being honest the beginning of this week has been a weird one. In more fitness related news: I’m finally feeling lean again 🥳🥳 for the last few weeks we’ve been hitting the weights hard, but my diet has been just okay! But just okay isnt gonna cut it bc YA GIRLS GOT GOALS⁉️ and goals don’t work unless you do!!! I’m not gonna beat myself up though, I’m just gonna learn from it & get back on track 🥰

Shared where my heart was the other day on Facebook thought I’d share here! It’s a long one ... buckle up.

Been feeling soooooo good lately! I really never knew a thing about gut health but boy let me tell you it’s been ‘life changing’ ....as dramatic as that sounds. I cannot believe I’m only on day 14 of this 30 DTHL. 
I used to be CONSTANTLY TIRED. I’m not exaggerating when Im telling you .....I needed a nap every day. I just felt like there was something wrong with me. I knew I needed to eat better but every single diet I went on was just that ... a diet. It wasn’t realistic for me. I ended up not having a good relationship with food. Which in return or in addition I didn’t have a good relationship with my self esteem / and body image. 
I’m not one to talk about my problems on social media so that may be a surprise to some of you since I used to blast my face on here doing makeup tutorials but eventually i would get so anxious I hated coming on here doing what I love.. makeup. It was crippling to me. 
Fast forward to today... obviously I’m not miraculously where I want to be in 14 days. But I’m 8.9lbs down (never about the weight for me it’s about feeling good in my own skin). Have more energy than I know what to do with... even worked out today .. go me! I’ve cut out energy drinks, coffee, and diet soda... and didn’t die I actually feel so much better. I also don’t have cravings or feel like I’m starving myself ever!! I eat till I’m full with cleanse approved foods and that’s it. Make healthier choices but not to the extent I’m obsessing over what I’m eating and what I ate and ohh my gawd I’m still hungry.. shit I over ate my points , calories , etc. instead I’m just listening to my body and being intentional. May sound like BS but I’m telling you it’s working! I feel free. 
Okay that’s enough if you made it this far. ..You the real MVP just thought I’d share my experience so far with the 30 days to healthy living!

Contándoles un poco... En mi caso, al fin he logrado nivelar mi insulina basal producto de los SOP (que tengo desde los 12 años) 💪🙌 ¿Qué me ha funcionado en este año? Ayuno intermitente, alimentación balanceada, entrenamiento de fuerza - HIIT y la adecuada suplementación. (Todo bajo asesoría profesional). Ahora a lograr nuevas metas personales que poco a poco les iré contando. 🙋

Ingredients (for 2 servings)
TILAPIA
1 lb tilapia fillet (455 g)
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon cayenne pepper
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon lime juice, about 1 lime
1 tablespoon olive oil
CREMA
1 avocado
½ cup fresh cilantro (20 g), roughly chopped
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon lime juice, about 1 lime
¼ cup yogurt (60 g)

Preparation
Preheat oven to 400˚F (200˚C).
In a small bowl, mix the chili powder, cumin, cayenne, salt, pepper, and olive oil with the lime juice.
Using a basting brush, generously coat each side of the tilapia fillet with the marinade.
Bake fish for 12 minutes in a preheated oven until edges begin to crisp and fish is moist and flaky.
While fish is baking, prepare the crema.
In a blender, combine avocado, cilantro, salt, pepper, lime juice, and yogurt. Blend until mixture is smooth.
Serve tilapia topped with avocado crema and freshly chopped cilantro.
Enjoy!

Got a nice 3 miler in tonight in the rain. Felt pretty good and enjoyed the stress washing away. Going downhill was a little bit of a strain so I had to pull back on my stride and slow down. Just have to listen to the body and ensure progress is moving forward.

I'm glad my coworker decided to go walking with me today.  We went and checked out the Salesforce Park and got a good walk in. The sun was shining,  blue skies,  beautiful city views, and wonderful company.  What else makes for a better walk? 🚶🏽‍♀️

She decided to come earlier than expected (almost 3 weeks naturally) and once I was ready to push it only took me two pushes! The labor was easy to handle, manage and do and I believe my body was more prepared because of the workouts I continued to do throughout the pregnancy. It’s been a week post partum and I’m almost cleared to start working out again. 4 more days and I’m back at it. Ready to lose this stomach! Next post I’ll share my starting point. Let’s do this!!

Throwback picture today for a little face to face. The left is Christmas 2018 and the right is Christmas 2019. Christmas of 2018 I was about 185lbs, a diabetic, had bad hormonal acne, and overall was miserable. People had no idea how out of control my health was at that time. When 2018 started I knew I had to change. I found the keto diet and through research noticed that not only would it help me lose weight but it would help balance my hormones from PCOS, and get my diabetes under control. The twelve months of hardcore keto, lazy keto, and exercise madness began at the beginning of February in 2018.

When 2020 started I made a personal vow to myself that I would not eat out, I would meal prep all my meals, and I would exercise... A LOT! It’s already made a huge difference! What blows my mind is how easy it truly is to be healthy. A lot of people don’t understand how rewarding it is to not feel bloated and sluggish all the time or to not feel that brain fog. I love the lifestyle I have adopted!! ✖️❤️✖️
It’s been an awesome journey thus far and I’m loving having this page to track everything I’m doing! Not to mention the amazing support I get on here as well❤️

Who doesn’t love a delicious pasta dish? Especially creamy ones 😍 ⁣
⁣
Many people wouldn’t expect to see pasta on a ‘health’ Instagram page, but we believe there is definitely room for pasta in a balanced diet! Carbohydrates are often demonised in the media but they provide our bodies with a very important energy source: glucose (which our brain loves to use!) 🧠 So please don’t think you ever need to cut carbohydrates out of your diet to reach your goals! Maybe don’t eat pasta every single night but, like most foods, it is completely fine to enjoy it in moderation 🌟 ⁣

TIP: For some added fibre try and use whole grain pasta when possible! ⁣
⁣
This can be made vegetarian by excluding the tuna. If you are a meat eater this would also be yummy with some chicken instead of tuna! ⁣
⁣
Recipe: ⁣
(Serves 4-6 people) ⁣
2 onions ⁣
2 tbsp crushed garlic⁣
Dollop of olive oil⁣
Two large handfuls of mushrooms ⁣
2 red capsicums ⁣
2 courgettes ⁣
2-3 tbsp pesto (vegetarians check that your pesto doesn’t contain rennet) ⁣
3 tbsp mixed Italian herbs ⁣
Stock 150ml (we use low sodium vegeta) ⁣
1 can of diced tomatoes⁣
1 tbsp tomato paste⁣
170g cream cheese ⁣
400g canned tuna ⁣
500g pasta ⁣
Salt and pepper⁣
⁣
1. Fry onions in oil in a saucepan. Once softened add the garlic.⁣
2. Add mushrooms, fry for 5 minutes then add capsicum for another 3-5 minutes then add courgette last so it doesn’t go too soft. ⁣
3. Boil water in a pot for pasta. Add pasta once it is boiled.⁣
4. Add pesto, sprinkle of pepper and the Italian herbs to the veggies.⁣
5. Add stock, tomatoes and tomato paste. Simmer on medium heat for about 10 minutes. ⁣
6. Lower heat and add in the cream cheese. Mix slowly so it doesn’t separate. Once cream cheese is mixed in leave on a low-medium heat for another few minutes. ⁣
7. Add tuna 🐟 (or not if wanting vegetarian) ⁣
8. Drain the cooked pasta and add to large bowl, and top with the pasta sauce. Garnish with fresh basil. ⁣

378 lbs -> 290.2 lbs (-87.8 lbs total, +2.8 lbs since last week)

This is really really hard to post.

I went off the rails for a few days there. I didn't think it was THAT bad, though. Basically Friday and Saturday were cheat days, and Sunday was very relaxed.

I've been dealing with a LOT of hunger lately. It doesn't matter what I eat, when I eat it, or how much water I've had, I'm just HUNGRY.

This really hurt.

➡️Snowing this morning, so trying to find ways to get some cardio in and thought about the calisthenics I did in p.e. class when I was in high school...jumping jacks and windmills!
➡️I remembered to wear my knee sleeves on leg day this time. However, after one set of jj’s both knees started hurting. Heck, the right one was painful to the touch. Right now I’m icing it as a last ditch effort before calling my physician. ☹️
➡️Continuing to work on that coordination and balance. Not all is on video. 😉

I had to make up work from yesterday.. 1. Reverse Lunges- I struggled bad last week with my achy knees, I could barely do 6 on each side. 
Today I did 10, and it was soo much easier.  Which was extremely motivating! 
2. I went up to 70lbs on my RDL

Day 21 Lunch. Roast chicken tender, tomato and smashed avo in a wrap. Love these wraps! I feel like my photo quality might be taking a bit of a hit being back at school! But this was very yummy all the same. Had this at about 11:00am to break my fast and then my afternoon snack of  a banana & date muffin at 1pm to keep me going.
