Idea de snack saludable👌🏽👌🏽 Si no lo han probado, no dejen de hacerlo..
🔅Ingredientes:
- ¾ taza yogurt griego con stevia/vainilla al gusto.
- 1 cambur/banana pequeña.
- ½ cda mantequilla de de frutos secos, usé Power Fuel Crunchy de @eatnuttzo
- ½ taza cereal inflado (uso Kamut).

150g (3/4 cup) dried long grain rice
1 and ½ tbsp Cajun seasoning
2 skinless chicken breasts
1 and ½ tbsp olive oil
½ red bell pepper, deseeded and sliced
½ yellow bell pepper, deseeded and sliced
½ green bell pepper, deseeded and sliced
1 small brown onion, peeled and sliced
Small bunch coriander (cilantro) roughly torn
Zest of 1 lime
1 avocado, peeled, de-stoned and chopped
Instructions
Boil a large pan of water, add the rice and simmer for 15 minutes until the rice is tender. Pour into a sieve and leave to drain.
Whilst the rice is cooking, heat a cast iron griddle pan on a high heat and brush on a little oil.
Sprinkle the Cajun seasoning and pour half the oil on the chicken breasts and rub it in using your hands. Flatten the chicken breasts slightly with your hands and place on the hot griddle. Cook for 7-10 minutes, turning once, until the chicken is charred and no longer pink in the middle. Place on a chopping board to rest whilst you cook the vegetables.
Brush the rest of the oil on the griddle and place the peppers and onion on in a single layer. Cook for 5-6 minutes, turning a couple of times, until lightly charred.
By now the rice should be cooked and drained. Fluff it up with a fork and stir through the coriander and lime zest.
Divide the rice between two bowls. Cut the chicken breasts into slices and place on top of the rice. Add the char-grilled peppers and onion and top with the chopped avocado.

Spicy steamed dumplings.

Recipe
Ingredients:
~ 2 lbs of bok choy, washed and julienned
~ 1 package of wonton/dumpling wrapper
~ 1 box of firm tofu, drained & mashed
~ 1/4 cup of saute mushrooms
~ 1 tablespoon black bean sauce
~ 1 tablespoon corn starch
~ salt to taste
~ oil
Spicy sauce (whisk all ingredients in a bowl until sugar dissolves):
~ 3 tablespoons soy sauce
~ 2 tablespoon chili oil with chili crumbs
~ 1 tablespoon sesame oil
~ 1 teaspoon Chinese black vinegar
~ 1 teaspoon grated ginger
~ 1 teaspoon sugar

Place julienned bok choy in a large bowl with 2 tsp salt, using your hands, gently massage salt into veggies. Set aside for 15-20mins. In a heated pan with 1 tsp oil, sauté mushrooms until lightly brown, add black bean sauce and stir until well combined, set aside and pan fry mashed tofu for 2 minutes (or until brown), season with salt. Place both ingredients in a big bowl.

Using a cheesecloth or just with your palms, squeeze as much liquid out as possible from your bok choy. Add tofu mixture, cornstarch, combine well & season if needed.

Place a dollop of mixture in the middle of your wrapper, moisten side with water and pleat to seal. Place wontons on a steamer basket and steam for 15mins in high heat. Remove and serve warm with spicy sauce. You can serve sauce on the side or as pictured.

There’s nothing like a chocolate cake when the cake cravings hit! Especially with the cold weather the last week.

Good news. This whole cake is under 200 Cals!! Yes icing included!
.
SALTED CARAMEL CHOCOLATE CAKE:
Recipe:
- 1/2 serving whey (I used @usnsa bar-one)
- 1 tbsp coconut flour @natureschoicesa
- 1 teaspoon flax flour (or almond flour)
- 1 tbsp hot chocolate @natureschoice or you can use cocoa
- 2 tbsp pumpkin puree
- 2 tbsp ff yoghurt
- 2 tbsp water
- 1 tsp @sweetlysays sugar substitute (you can use erythithol/xylitol etc)
- 1/8 tsp baking powder
- 1/8 tsp bicarb
- @supashapesa drops (to taste)

Method:
- Preheat the oven to 180
- prepare two ramekins with Spray&Cook, NB- make sure you spray them very well.
- Mix all the dry ingredients together.
- Mix all the wet ingredients together.
- Combine the wet & dry ingredients
- Pour in ramekins and bake for 20-25 mins. Check regularly and test with toothpick.
- Let it cool.

Macros for cake:
134 Cals (thats less than a bowl of oats)
P: 15g C: 9g F: 4g
.
You can top it with whatever you like! .
I made a High Protein Salted Caramel Icing P: 6,6g C: 1,3g F: 1,3g.

Haven't been super active this week. Just kind of been trying to get by. It's my time of the month, and I've been giving I to temptation more than I would like to admit. But today has been a pretty active day for not going to the gym and not being at work. I got over 10k steps, went to the bath and body works candle sale, went grocery shopping, did 3 loads of laundry and put them away, cleaned both bathroom's, did the dishes, cleaned the kitchen, vacuumed, and put up the Christmas tree. Calling today a win in my book!

Just make the package as if you were going to make cake and divide the batter into 6 donut molds (or 12 mini donuts) and bake it in the oven at 350F for about 10mins. Topped with a protein frosting and of course boat loads of sprinkles🥰.

2. Prioritize your exercising/moving. Yes we already established this time of year is BUSY! But with the increase of stress and food around you, your going to need to be moving your body! Not only for your body but also your mind🤓⁣

3. It’s okay to indulge a little bit and enjoy a holiDAY but remember Christmas is one DAY not the whole month. Indulge for a night, not a season. ⁣

4. Last of all, and most important...LISTEN  to your body!!! Your body is going to tell you what you need ( veggies, sleep, meditation, a hot bath, exercise, etc...)but you have to...⁣

Alright we are in the thick of the Holiday Grind! Now don’t get me wrong I LOVE the holidays, but Let’s be real it can be busy busy busy! Which can lead to 👉🏽stress and stress usually makes us weak in the midst of temptations...AND THAT makes it hard for us to stick to our goals! Haha are you still following?🤔⁣
