Breakfast today was next level. Savory Sweet Potato Waffles topped with Greek Yogurt Pimento Spread, Sautéed Kale, Fried Egg, and Green Onion. Details below!

Made my usual savory sweet potato waffles but with a few twists! I don’t have a spiralizer where I’m staying in North Carolina but we just grated the sweet potato instead! I mixed it with one egg, some salt and pepper, and some garlic seasoning, and then stuck it directly into the waffle iron (greased) for 5-6 minutes.

Pimento Greek Yogurt Spread:
- 1 cup Greek yogurt
- 1 4 oz jar pimentos, liquid drained and chopped
- 1 small jalapeño finely chopped, seeds removed
- A little less than 1/4 tsp garlic powder
- Salt and pepper to taste
Mix together in a bowl!

Made my usual savory sweet potato waffles but with a few twists! I don’t have a spiralizer where I’m staying in North Carolina but we just grated the sweet potato instead! @paleo ‘Tis the season when pumpkin is the only thing rivaling cauliflower in produce popularity, and I’m here for it — especially in the form of fluffy af cakes 👏🏻👏🏻 Heading to Barry’s Bootcamp + brunch by the bay this morning, so throwing it back to one of my fave sweet + savory spreads from awhile back 🥞 -
This pancake recipe is my go-to when I’m feeling more ambitious than usual (read: I typically use add-water-only mixes🙎🏼‍♀️), but it actually comes together quickly, and the leftovers can be stored in the fridge or freezer for easy pop-in-the-toaster breakfast prep 👌🏻.

Pumpkin Cashew Butter Pancakes: ¼ cup coconut flour • ¼ teaspoon cinnamon • ¼ teaspoon baking soda • 2 tbsp. cashew butter (can sub any nut butter) • 2 eggs, slightly beaten • 1 egg white, beaten stiff (optional, but makes the pancakes fluffy) • ½ tbsp. honey 🐝 (you can sub stevia or another sweetener) • 1/2 cup pumpkin • 3 tbsp. almond milk (can swap pumpkin purée) • 1) Combine first two dry ingredients in a small bowl. In separate bowl, stir nut butter, eggs, maple syrup (or honey), and pumpkin. Slowly stir in almond milk. Add dry ingredients to wet, stir until well combined, then let batter sit for a couple minutes. Cook up your cakes! (Makes 1-2 servings)

Use some of the citrus sauce from the shrimp as a double duty dressing.

1 pound mediumPan-Seared Citrus Shrimp 31/40
8 cups greens such as arugula spinach, or spring mix
Fruity or lemon-flavored extra virgin olive oil
Juice of 1/2 lemon or 1/2 orange
1 avocado sliced or diced
1 shallot minced
4 ounces toasted sliced almonds
Kosher salt and freshly ground black pepper 
Gently warm the leftover shrimp. Or, if you prefer, serve the shrimp chilled.
Toss the shrimp with the salad greens in a large bowl. Lightly drizzle with olive oil, and if desired, some of the sauce remaining from the shrimp with a generous squeeze of citrus, and toss lightly to coat. Add the avocado, shallots and sliced almonds and then season with kosher salt and freshly ground black pepper and serve. .

Using a mix of @kamadojoe charcoal and @olivepipco briquettes for the perfect heat and smoke for this pork belly. That glorious glaze is thanks to a mixture of Jameson whiskey, honey, soy sauce mix that pretty much turned the outside into this beautiful candy crunch.

How I’m dealing with negative body image? BY NOT FREAKING LOOKING AT MY BODY. 🙈
I don’t mean this as literally as the photo seems... I don’t mean showering with my eyes closed, getting dressed in the dark, or refusing to have my photo taken: although I have absolutely done all of the above.😒
What I really mean is to take away anything that brings extra focus to my physique. I’ve taken a step away from body building, I don’t take check in photos, I don’t weigh myself or my food, and I don’t eat meals based off of how they will effect how I look. 
At some point you need to acknowledge that the environment you put yourself in is YOUR responsibility. If you’re not doing well mentally: CHANGE THE ENVIRONMENT. Make it work for you rather than changing YOU to fit the environment. 
Sure radical acceptance is something I’m working on and it will come: but while I’m not at that stage yet so I gotta set myself up for success.

Over these past couple of days I went on a spiritual retreat with my school. It was nice to have some down time, step back, reflect. Look I’m not going to sit here and complain about the quality of these. I paid $6 for a box of 6 donuts what do you expect 😂🤷‍♂️ BUT let’s talk about the blueberry and pumpkin spice cake donuts. WOW. If you thought this blueberry cake from Krispy Kreme was good, DUNKIN absolutely blows it out of the water. It’s WAYYY more softer, the donut is more of a cake texture and the taste reminds me of a blue berry cheesecake. DUNKIN HAS A BERRY BERRY GOOD BLUEBERRY DONUT

The Meadow Row made famous by @mountaindog1 is by far one of my favorite exercises for back! This really allows you to fully squeeze each lat individually! I’d recommend throwing on some wrist straps and and rowing until you can’t row anymore 😂💪🏼 lately, I have been working my way up to 4 plates (25lb plates) of sets of 10 and then throwing in a massive strip set to blow up the back but today I was so taxed I just did sets of 10 with 3 plates! GIVE IT A TRY!

You won’t get in shape making the excuse of “I am too busy to workout” and continuously spending that time watching Netflix or scrolling IG.⁣❌

You won’t reach your health goals constantly going through drive throughs because “too busy”, when really you failed to prepare ahead.⁣

You won’t reach your goals attempting some extreme diet or workout program, only to keep falling off, promising yourself “I’ll start again Monday”...then finding yourself saying the same thing week after week. ⁣

🙏🏽CHANGE takes getting uncomfortable. It takes changing habits. Not doing a 30 day challenge in hopes of losing some weight and keeping it off forever. No. It takes LIFESTYLE changes.⁣
