Happy Wednesday friends! I hope you all are having a great week! With the semester and the year coming to an end, I’m really trying to focus on self-growth! I’ve spent most of the year doing everything for everyone else that I forgot to check in with myself! Although I absolutely love doing things for other people, I felt my relationship with myself slipping away! One thing I had to really focus on was having the courage to let go! In my case that meant letting go of things holding me back! Instead of adding more things to my day, I had to start subtracting things! This is a reminder that it’s OKAY to say no to things and do what’s best for yourself! 🙌🏼

Waffling this Wednesday using my PALEO PANCAKE MIX from @nwbulkmarket topped with berries, granola & @eatnuttzo powerfuel 😍

Roasted Cauliflower & Chickpea Shawarma Wraps 🥙😍

Recipe: 1 lb cauliflower small florets, 1 can of chickpeas drained, rinsed, & dried, 1 tsp each of cumin, garlic powder, smoked paprika, turmeric, coriander, 1/2 tsp of salt, 1/4 tsp each of cinnamon, ginger powder, black pepper, 1/8 tsp of cayenne, 1/4 cup olive oil, juice of 1/2 lemon Tzatziki Sauce: 1 cup non dairy plain yogurt, juice of 1/2 lemon, 2 garlic cloves minced, 1 tbl of fresh dill ( sub dried dill weed to taste), 1 mini cucumber grated with water squeezed out using kitchen towel, s/p to taste

1️⃣ In a medium bowl combine chickpeas & cauliflower.
2️⃣ In a small bowl combine spices, oil, and lemon mix well
3️⃣ Pour mix over veggies till everything is coated
4️⃣ On a parchment lined large baking sheet, roast chickpeas & cauliflower at 425 F for 25-30 Rotating and flipping half way through
6️⃣ Meanwhile, make tzatziki sauce, combine all ingredients, mix well
7️⃣ Wrap up in your favorite wrap style bread (sara used pita) drizzle with tzatziki sauce. you can also add pickled red onions, cucumbers, pickles, hummus, & some parsley. Enjoy!

you all know I’m a fan of regular bananas, but sautéing them in coconut oil and some cinnamon just takes them to the NEXT LEVEL 😍 if you’ve never tried it, please do!

Chinese Chives Boxes 🌱😍

Dough recipe: (Make 24 boxes) 
400 g flour
210 ml water
1/2 tsp salt 
Add the flour and salt into a big bowl for easy kneading. Pour water little at a time. It’s all depending on the quality of the flour, some may need 210 ml of water and some may need less than 200 ml to have perfectly knead dough. Knead the dough till it doesn’t stick anymore on hand. (add flour if dough is too soft) Cover and let the dough rest for 15 minutes. 
Fillings recipe: 
350g Chinese Chives, clean & finely chopped 
1 carrot, finely sliced 
100g shiitake mushrooms, chopped 
4 clove garlic, minced 
2 tbsp oil
Sauce ingredients: 
1 tbsp sesame oil 
1 tbsp soy sauce 
1 tsp white pepper 
1 tsp ginger powder
1 tbsp mushrooms stir fry sauce 
Salt for taste

✔Heat up oil in a wok, add in the garlic and sauté till fragrant. Then add the carrots and cook till soft, follow by mushrooms. Add in the sauce ingredients and stir for another 2 minutes. Turn off the heat, lastly add in the chinese chives and mix well. Let it cool completely before use. ✔Take out the dough from the bowl and knead for a few seconds. Divide the dough into 24 pieces (about 40g per piece). Roll each piece into a circle (about 4 1/2 inch in diameter). Place the fillings in the middle and seal it in the same way as to fold a dumpling. Place the fold side down and gently patch it flat. ✔Heat 2 tbsp of oil in a frying pan, place the fold side down and cover it. Cook with medium low heat. Flip the chives box until both side are golden brown. ✔Finally serve hot with chilli oil or your favourite sauce

Happy Tuesday friends! I hope you all are having a great week so far and enjoyed your day off yesterday! I definitely enjoyed mine but now it’s feelin’ like a Monday and it’s hitting me hard LOL! I just got home from my internship and class and I’m doing some meal prep before getting into homework/projects/studying and then trying to de stress with some yoga tonight! Enjoy you day loves! ❤️

QUIEN por aquí es FAN de el plátano como yooooo??😍TAJADAS MEGA CRUJIENTES SÚPER SALUDABLES en 10minutos!!!🍌 .

vas a necesitar:.
.
👉🏻 cortar el plátano en tajadas MUY finas, de un plátano te salen aproximadamente 12 tajadas a lo diagonal (en el video te muestro cómo cortarlas para que te queden súper crujientes).
👉🏻 una vez cortadas agregar en un sartén bien caliente PAM, el spray que tengas, aceite de coco o de oliva y llevar las tajadas a el sartén junto con 3 cucharadas de agua.
👉🏻 dorar bien de un lado, agregar sal y luego voltearlas del otro lado unos minutos pero sin dorar mucho el otro lado.
👉🏻ahora rociarles de nuevo PAM a todas las tajadas, agregar sal + cebolla en polvo + everything on the seasoning @daksspices y llevar al AIRFRYER por 10 minutos a 390grados (puedes utilizar el horno en BROIL).

1 lb( 450-460g)Ground Chicken ( I use chicken breast and ground it afterwards)
2 tsp Black Pepper
1 tsp Smoked Paprika
1/2-1 tsp Crushed red pepper
1/2 tsp Salt 
1/4 tsp Allspice
2 Tbsp (24g) Swerve Brown* or light brown sugar
1 Tbsp (16g) Extra Virgin Olive Oil for frying but better use Teflon surface pan
Mix all together , fry until ready. 
I use this patties with eggs in a morning give me a good source of lean protein.

I made this one on stories the other night & got lots of recipe requests so here it is! I LOVE easy one pan meals like this because there’s not a ton of steps, prep, or dishes and you can easily make it into a bigger batch for leftovers. I immediately transferred my leftovers into single serving sized containers so that it was already ready to go for the week.

Chicken & Veggie Quinoa Stir-Fry
.
Ingredients:
•1.5lbs chicken breast, bite sized pieces
•2 bell peppers, sliced
•1 red onion, sliced
•2 cups of greens (spinach, arugula, kale, collards— whatever you have!)
16 oz package mushrooms
•1 cup quinoa, cooked (I used @traderjoes frozen)
•1 lemon, juiced
.
Chicken Marinade:
•3 tbsp white balsamic vinegar
•1 tbsp dijon mustard
•2 tbsp olive oil
•1 tsp garlic
•Salt/pepper to taste
.
Marinate the chicken ahead of time. The longer, the better, but at least 30 minutes. I threw the chicken in the marinade in the morning and then put the meal together at dinner time.
.
Saute chicken (and extra marinade) on medium heat until cooked through. Transfer the chicken to a separate bowl.
.
Saute peppers, onions, and mushrooms in 1 tbsp olive oil until softened. Add the greens last and cook until wilted.
.
Add cooked quinoa, cooked chicken, and lemon juice to the pan. Combine well and serve. Salt & pepper to taste. That’s it! 🤗

I am a porridge 🥣 lover. But I’m also a pancakes 🥞 lover. I cooked these ones based on few recipes I saw but it’s my own inspiration. The recipe is based on 🔸oat flakes (crushed to get flour) 🔸almond flour @nu3_fr 🔸almond milk 🥛 @ecomiloficial 🔸chia seeds @biocoop_officiel and 🔸goji berries @_lavieclaire.  I put everything in my blender, got a pancake batter and that’s it 🤗. For the toppings, I used the peanut 🥜 butter @nu3_fr, cinnamon and goji berries. It’s super easy to cook, delicious 😋 of course and perfect to start the day. Eeeeeet... comme promis, voici la recette de cette tuerie qui a fait mon petit-dèj d'hier et aujourd'hui ! Ce cheesecake à ENFIN la texture et le goût que je cherchais depuis déjà un bon moment ! 👌

Pour ceux qui me suivent depuis quelques mois, vous aviez déjà vu passer des recette de cheesecake dont je n'étais pas totalement satisfaite et je vous avais promis que j'allais y travailler ! 💪.

.Je me suis un peu inspirée de celui de @jessi_ka_fit , mais, un peu comme d'habitude, je l'ai modifiée à ma manière et adaptée à mes propres macros 😉
.
📊 Macros:.
Entier : 916 kcal - 76 G - 26L - 84P
1 portion sur 2: 458 kcal - 38G - 13L - 42P
.
📜 Ingrédients : 2 portions (ou plus, selon TES macros)
.
BASE:.
35g farine d'avoine (ici: goût crème catalane)
38g blanc d'oeuf
1g bicarbonate (ou levure chimique)
38g séré maigre SL (ou fromage blanc)*
.
GARNITURE:
335g séré maigre SL*
75g compote de pomme SSA
20g fécule (ici: patate)
20g whey isolate (ici: goût apple pie)
Optionnel:
20g beurre d'amande
20g figues séchées en morceaux (ou autre fruit sec)

🥣
BASE:
1) Mélange tous les ingrédients secs, puis ajoute le reste. Mélange bien.
2) Verse la pâte dans un moule de 14cm de diam. Enfourne 3-4 min, juste que le dessus de la pâte ne soit plus collant.

GARNITURE:
1) Mélange la fécule et la whey, puis ajoute peu à peu le séré maigre et le beurre d'amande en mélangeant bien.
2) Ajoute les figues et mélange à nouveau. Verse la préparation sur la base et place le moule dans un Bain-Marie.
3) Couvre le moule avec du papier cuisson, puis enfourne à 160°C pour ~30min. Vérifie la cuisson, le dessus doit être "pris" et les bords légèrement dorés, comme sur la photo.

💡 Je l'ai servi avec du Kaki et du beurre de cajou.
