Sweet Potato Toast 3 ways 😍 Starting the week with one of my favorite breakfasts ever! Topped sweet and savory so you have a little bit of everything 👌🏻 One of the first things I ever made and shared on this account 2 1/2 years ago and I still have them weekly! Super easy + tasty + an inexpensive way to have gf/paleo toast. -

Don’t get me wrong, I love to buy a loaf of of fancier bread and keep it in the freezer but this is a good alternative if you’re trying to eat gf or grain free without spending lots of 💴 But even if you aren’t, this is just a delicious breakfast. You can make the sweet potatoes a day or two before then top them in the morning when you’re ready. But also they’re ready in about 12 minutes if you don’t plan ahead 😉 I recommend topping them 3 ways because the more toppings, the better 😎 Happy Monday!! -

#breakfast details 👉🏻 3 slices of sweet potato toast (about 1/2 a large sweet potato) 
Take a large sweet potato and slice into toast shape. I sliced mine into about 5-6 slices. You can microwave your sweet potato if it’s too hard to slice. 
Preheat oven to broil. Place the sweet potatoes on a baking sheet and bake on the bottom shelf for 12-15 minutes depending on how thin you slice them. You can also toast them but I think that takes longer and it’s harder to judge when they’re done or not. You want them to be soft. 
Topped with: sautéed spinach + 1 boiled egg + @traderjoes everything but the bagel seasoning + @aldiusa Pb with banana and cinnamon + 1/2 avocado #paleo #glutenfreefood #choosingbalance

Trying to eat 1600kcal of processed foods will likely result in far less filling, less voluminous food and poor micro density. Feeling sluggish and very hungry is not a great way to go about losing weight and will almost certainly lead to overconsumption or going off track. 🍪 ⠀

FINDING YOUR BALANCE: ⠀

Both diets above have draw backs, there should always be an element of balance. Depriving yourself of all the foods you like and force feeding kale is a good way to get sick of dieting and give up entirely. If we understand that a calorie deficit is the physiological mechanism of weight loss, we can start to look at the practical methods that best help YOU achieve this: ⠀

This may mean swapping in a 250kcal chocolate bar in place of yogurt and fruit. Pumpkin Muffins 😍 Plant based, paleo, gf- plus an easy icing on top 🙌🏻 They were so soft inside- that’s my favorite part of baking with pumpkin. Gives everything the best texture! I made these to bring home this weekend but we ate most of them before we had the chance to bring them back haha. Luckily I had one left today 😉 We’re off to church this morning and then spending another day at home before heading back! Hoping to make a @traderjoes stop on the way through STL 😎 Gonna stock up on all the fall goods!! Happy Sunday! -

1 cup pumpkin purée (canned pumpkin) 
1/4 cup almond flour 
2 tbsp coconut flour 
1/4 cup maple syrup 
1 tsp cinnamon 
1 tsp pumpkin pie spice 
1 tsp baking powder 
2 tbsp nut butter 
Mix everything together well, line a muffin tin with liners, add batter about 3/4 of the way up the cups. Bake for 25-28 minutes (use a toothpick to see if they’re done), let cool before removing from wrapper. 
Icing: 
Mix together- 4 tbsp canned coconut cream (the thick part of canned coconut milk or you can buy just the cream) + 1 tsp pumpkin pie spice + 1 tbsp nut milk + 2 tbsp pumpkin purée. Mix it together and then you can put it in the fridge for 10ish minutes to let it thicken. Top each muffin with some 🤗 Enjoy! Makes 6 muffins.#plantbased #paleo #choosingbalance

Leftover paleo buffalo chicken tenders 🙌🏻 This is the plate I was dreaming of having tonight but we ended up leaving later than expected so instead stopped for Panera on the road. Good but not as good as this plate 😍 These chicken tenders have been a favorite over here recently and someone made them and loaded them onto a sandwich... how good does that sound?!! Can’t wait to get home and recreate that! Hope you had a great weekend ❤️-

Black Bean Brownies 🍫👩‍🍳

This is a great example of how to incorporate plant-based whole foods into everyday cooking and treats 🙋🍫

▫️1 can black beans, drained & rinsed
▫️ 1/2 cup pitted dates, softened
▫️2 eggs
▫️1/4 cup vegetable oil e.g. coconut / sunflower / canola
▫️ 1 tsp vanilla extract
▫️20 drops of stevia extract*
▫️1/4 cup cocoa powder
▫️1/2 tsp baking powder
▫️1/2 tsp instant ground coffee
▫️1/4 tsp salt
▫️1/2 cup oat flour (blend 1/2 cup oats)
▫️100g dark chocolate, roughly chopped

✅ Blend the beans & dates in a food processor until smooth. ✅Combine the wet ingredients and dry ingredients in separate bowls. (Reserve some of the chocolate the topping.)
✅ Add all the ingredients together and mix until combined. Don't overwork it. ✅ Add the batter to a greased oven-proof dish. Sprinkle over the reserved chocolate.
✅Bake at 180°C for 15-20 minutes until cooked through. Allow to cool before cutting.
✅ Serve with fresh berries & thick plain yoghurt or whipped lite coconut cream (or enjoy as is 😉)

Day 1 of my 21 day cleanse starts today! It's an inner body tune up with real food and lots of it. It's not only going to help my body gently get rid of waste, it's also going to help revitalize my body and mind by giving it the micro and macronutrients that it craves and needs to function optimally. Here's my first meal of the day and of the 21 day cleanse. Overnight oats with plain yogurt, strawberries and blueberries. But ya for those of you who actually care about oats (lol sry if u don’t) what’s your fave type?? Been mixing around with steel cut, musli type, super fine oats, and different grains like barley and quinoa. I’ve been going for finer grains because they are just quicker to prep and I don’t have to do the whole soak them overnight thing. Mixing up the toppings is key and this morning was sliced red grapes, mixed nut butter, and bee pollen 🍯 🧡

M2 - Turkey chilli ... lean turkey mince, diced tomatoes, garlic, dried chilli flakes, cayenne pepper, turmeric, salt and pepper and bulked up with zucchini although you can use any veg. just use beans to easily make it high carb if needed and you can eat it on it’s own or add parboiled basmati rice and 1/4 avocado. Always great to cook in bulk and have leftovers ready to go.

M3 - Left over roast chicken 🍗 from last night crisped up in a non-stick frypan on pre-packaged salad for convenience (American bbq slaw kit with 1/4 avocado and thinly cut sweet potato wedges👌🏼

M4 - red lentil soup - a good one to make in bulk and have over a few days. Salt-reduced vegetable stock, onion, carrot, celery, red lentils and a bay leaf. Simple👌🏼 The lentils are a good protein source but you could always throw in some chicken if you did want extra protein.

Chicken, vegetables, healthy carbs, chicken, vegetables, healthy carbs.....(repeat) I try using spices and healthier condiments like spicy mustard to mask the chicken.
