Started my Monday off with a 7 mile run 🏃🏽‍♀️My half marathon is in 6 days, so I made my Chocolate Chip PB Oatmeal 4-Ingredient Cookie recipe to keep me energized throughout the week😻 #dEATS 👉🏻 2 cups of rolled oats, 2 ripe bananas 🍌(the spottier the better), 1/3 cup of dairy free chocolate chips 🍫, & 1/3 cup of peanut butter 🥜

Mix all ingredients by hand in a bowl, roll into balls, and place them on a lined baking sheet. Bake at 350 for 25 minutes! Store in the fridge 👌🏻 These make the best grab and go sweet snack 🙌🏻 oh and they never last more than a couple days in my apartment (they are that good) 🤩

Sweet and savory toast this morning 🍞 Had this exact same meal as a snack yesterday and having it for breakfast today 😎 My sweet friend picked me up some @erewhonmarket paleo bread after her trip to LA and I haven’t been able to stop eating it 😅 -

-1/2 cup rolled oats cooked on the stove according to package directions in 1 cup water — then added 1 tbsp chia seeds & 1 scoop @nuzest_usa vanilla clean lean protein (code KPINGITSIMPLE) + 1/4 cup egg whites — whisked til fluffy. Then I added 2 tbsp pumpkin purée and a ton of pumpkin pie spice.
Topped with banana slices, raisins, maple syrup, @georgiagrinders maple caramel almond butter, & walnuts

✨Paleo Chocolate Chip Banana Bread✨
3 overripe bananas
2 eggs (I use @vitalfarms)
1 tbsp vanilla
1 cup almond flour (I buy mine @traderjoes for a great price!)
1/2 cup coconut flour
1 scoop collagen (optional)
2 tbsp chia seeds
2 tbsp honey or maple syrup
1 tsp cinnamon
1/4 tsp salt
1 tsp baking powder
1/2 cup @hukitchen GEMS

Directions: Preheat oven to 350 degrees. Combine all ingredients in a bowl. Save some chocolate gems to top your banana bread with🍫 Line a bread loaf pan with parchment paper and pour the mixture in the pan. Bake for 35 min or until the edges are golden brown! #cleaneating #healthyrecipe #healthylifestyle #bananabread #glutenfree #paleo #grainfree

I have spent the last two days in bed sick. My meals have pretty much consisted of deli meat and cheese.
Tonight my family went out to dinner with other family that is visiting.
I was going to make chicken patties... But, then saw smoked salmon I had bought for sushi. So...
The only thing, no Tamari boooo. I used Sriracha mayo instead.
And guess what??
This stupid sickness has taken away my taste! So I am guessing it was good.
Smoked salmon, avocado, @miraclenoodle rice, cucumber, cream cheese, spicy tuna. 😋

Except for the sweet potato, this meal is made completely from #FarmersMarket ingredients! The cabbage, carrot, and onion (and sweet potato) were transformed into a delicious Ethiopian-inspired dish, braised for an hour in olive oil, turmeric, cumin, salt, and pepper. For protein, I chopped up and roasted the soy-free chickpea tempeh, which, not gonna lie, tasted a bit better as a sample at the farmers market! Maybe I needed to roast it longer and make it crisper? Or maybe it needed more seasoning? I'll keep experimenting with the rest of the batch. 🌿

I’ve been eating so off these last 2 weeks so I am forcing myself to stay on track and get back into the swing of things. I feel so much better when I am eating in a routine, and it is so darn easy to fall out of routine.
These are my 5 biggest tips to help you eat a healthy and balance diet and get back on track!

🍎 Eat as many colors as possible! Aim to have at least 3-4 colors per meal. More colors = more nutrients!
.
🍗 Always have a protein source in every meal. It doesn’t matter if your protein is meat, fish, eggs, Greek yogurt, tofu, cottage cheese, etc. - just make sure you have one!
.
🥑 Eat healthy fats. Fats do not make you fat! They actually help your metabolism and are extremely heart healthy. Omega-3 fatty acids should be eaten every single day. Omega-3 rich foods are avocado, egg yolk, chia seeds, flax seeds, hemp seeds, olive oil, avocado, and coconut oil.

💧DRINK A LOT OF WATER! You should be drinking at least half your body weight (in lbs) in ounces of water. If you aren’t a fan of plain water, add some citrus fruit into your water for extra flavor!
.
🍠Choose whole food carbohydrates. Carbs are not bad, and are actually needed for your body to use as energy. Just make sure you are eating good sources of carbohydrates like: fruit, sweet potatoes, regular potatoes, rice, oatmeal, quinoa, oatmeal, whole grain breads, whole grain noodles, etc.
