Dreeeeamy breakfast scenes 😋 here’s what’s in my bowl: chia pudding made with oat milk blended with frozen berries & Greek yoghurt to make it nice and thick, topped with @_brookfarm_ granola, coconut and sliced banana. Chia pudding is one of my favourite highly-nutritious, quarantine-friendly breakfasts: you can make it with whatever milk, yoghurt, blended fruit or liquid you choose. Happy Monday!

Back to basics for this Monday morning 🙌🏻 I’ve had a slice of sourdough with avocado or butter almost every day of quarantine and I’m nearing the end of my last loaf 😅 I go to the grocery store normally like every other day to grab something for a recipe so it’s been weird learning to ration and have self control 😜 Or not and then realizing I had all my favorite foods the first few days 😂  What’s been your favorite go to quarantine snack or meal?! Mine has definitely been  toast and cereal! -

Double Dark Chocolate Salted Cookies 🍪

1/4 cup coconut oil
1/4 cut nut butter
2/3 cup coconut sugar
1 tsp vanilla extract
1 flax egg (1 tbsp ground flax mixed with 3 tbsp water, let sit for 10-15 minutes)
1/3 cup cocoa powder
1/2 tsp sea salt
1/2 tsp baking soda
3/4 cup + 2 tbsp almond flour
1 tbsp coconut flour
1/2 cup chopped dark chocolate
Sea salt for sprinkling.

Mix wet:
Coconut oil, nut butter, coconut sugar and vanilla together in a bowl.
Add flax mixture and whisk together until creamy.

Mix dry:
Cocoa powder, sea salt, and baking soda in a separate bowl.
Combine dry into wet and stir until well-combined.
Add almond and coconut flours and further combine.
Fold in chocolate chip chunks.
.
Allow to sit in the fridge for 25 minutes to overnight.
Preheat the over to 350 degrees
Mould into rounds and bake for 12 minutes.
Finish with a sprinkle of sea salt.

I’m low key (emphasis on the low key) starting to enjoy this newly found free time I have these days 😌 I know we have to stay like this for a bit longer, but i’m starting to view the situation as an opportunity. I have time to get my priorities in check: prioritize my health & fitness, spend time with my family and pup before i move for my job in June, organize my life, focus on self care, etc. I have the time i need to do a little “level up” without any distractions! Starting my week off right with these these egg white muffin cups 👉🏻 whisk 8 eggs + 1/2 cup of egg whites together. In a muffin tin (sprayed with olive oil) place chopped veggies (mushrooms, peppers, tomatoes, onions, spinach, etc) and then pour in the egg mixture until each tin is about 2/3 of the way full. Bake at 375 for 25 minutes & store in the fridge! These pair well with fruit, toast, avocado, salsa, etc. happy Monday 💕

Mmmm wij zijn gek op bakken zoals je op onze feed kan zien en bananenbrood is by far onze favoriete bakrecept. @frommylittlekitchen maakte dit goudbruin gebakken brood en wij hebben het natuurlijk gelijk uitgeprobeerd. 
Nu jullie! Tip: Snij één banaan in de lengte en gebruik deze als topping voor een extra mooi resultaat. Heb jij ‘em gemaakt? Vergeet ons dan niet te taggen.

Ingrediënten:
- 3 bananen (1 voor garnering)
- 80 ml bak olijfolie
- 50 g honing
- 45 g havermout
- 230 g #gucot havermeel of volkomen speltmeel - 2 eieren
- 60 ml plantaardige melk
- 2 tl #gucot baking soda
- 1,5 el #gucot appelazijn
- 2 tl kaneel
- 1 tl #gucot vanillepoeder
- Snufje #gucot Keltisch zeezout

Bereiding:
1. Verwarm de oven voor op 160 ℃.
2. Doe de honing en olie in de keukenmachine of blender en mix.
3. Voeg hier vervolgens ook de eieren, melk en 2 bananen aan toe. En doe daarna de rest van de ingrediënten erbij. Mix het tot een gladde massa. 
4. Bekleed een bakvorm met bakpapier en giet het beslag erin.
5. Snij 1 banaan door de lengte en druk dit voorzichtig bovenop het beslag. 
6. Doe het brood voor 60 minuten in de oven.
7. Check met een satéprikker of het broodje gaar is, zo niet dan mag het nog een paar minuten langer.
8. Haal uit de oven en laat voor 15 minuten afkoelen.
9. Snij in dikke plakken en enjoy!

HONEY MUSTARD SAUSAGE TRAY BAKE 🍯 🥓 - 4 to 6 Large Sausages -1 red onion
- 2 sweet potatoes - 1 garlic clove
- Fresh thyme
- 1 tbsp mustard & 1 tbsp honey ➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖
Chop the sweet potatoes into wedges. In a roasting dish, add the sausages, sweet potato chopped red onion and garlic clove to the tray. Toss with 1 tbsp olive oil, mustard and honey
............................................................. Season with the fresh herbs and Salt & Pepper.
Bake in the oven at 200oC for 30-35 minutes until golden and sticky #OnePanWonders

Unsere heutige Sammlung. Meine Tochter hatte so viel Spaß die Taubnessel- und Ehrenpreis-Blüten zu zupfen. Die Schafgarbe hat ihr auch besonders gut gefallen und sie hat fleißig mitgesammelt.
